:-\ Has anyone used the TMX to make sourdough bread?

I'm trying 'unsuccessfully' to get a sourdough starter going at the moment. :(
2 failed attempts so far. Would be interested to hear of anybody's sourdough successes.
I think I will give up soon and try and buy a starter online.

This one has worked really well for me
Foolproof sourdough starter
1/2 cup plain yogurt
1/2 cup milk (skim, regular or buttermilk)
1/2 cup unbleached flour
1. Mix the milk and yogurt together in a glass or pottery container (Do not use metal).
2. Place lid on it, but don't seal it (sealed starters have been known to explode).
3. Put mixture in a warm place (80 to 90 degrees) for about 24 hours.
4. The yogurt and milk will separate forming a large curd, when adding the flour just stir it all back together.
5. Add the flour stir, and put back in warm place for 3 to 5 days; stirring daily.
6. It will bubble and have the odor of fermentation--it is ready to use.
7. Remember the starter is a living thing and needs to be fed and fed frequently when an infant.
8. I feed the "infant" weekly by placing it on the counter for several hours and allowing it to come to room temperature.
9. Then remove 1/2 cup starter, discarding the remainder.
10. Feed the 1/2 cup with equal amounts of milk (buttermilk will produce a stronger sour taste) and unbleached flour; i.e. 1 cup flour and 1 cup milk plus 1/2 cup of starter.
11. If you would like, you can feed the starter with 1/3 cup dry milk powder and 2/3 cup bottled water in place of the 1 cup milk.
I can't remember where I found it or I would credit the owner of the recipe. It is really resilient....it has to be to survive me! I have a tendency to forget to feed it.

Oh...and the 80-90 degrees is farenheit not celcius

If you have a look in the bread section there are 2 or 3 lots of posts there about sourdough. They may be helpful. I think Chookie is our expert.

Yes, I make an awesome sourdough!
in the morning mix
1 cup starter
1 cup flour
1 cup water kefir
at night before you go to bed put into tmx
your starter mix
3 cups of flour
2 teas salt
*: :: 2min 30 sec
put in bowl and cover overnight. In the morning roll out, roll up and put into tin until doubled. place in cold oven, turn on temp 180 degrees 1 hour :)

Just wanted to add that this recipe is made from the cultured starter not with yeast. I feed my culture every day with more flour and unchlorinated water.

theCrone, that' s the real thing ;D. I only feed mine when I make sour dough bread, which is about every 2 weeks. It survived for 11 weeks without being fed , while we were O.S.

We love sourdough. I'm like Chookie, my starter only gets fed when I'm going to use it.

Made TheCrone's sour dough, although cooked it in a hot oven. A delicious loaf and fool proof. Did need to add a bit more water, but that could be due to local conditions. Thanks

Did you use water kefir Chookie? Have you tried it with some wholemeal flour TheCrone? :)

Hi Chelsea, I made a mix of 1/2 water and 1/2 yoghurt to replace the Kefir. It would be fine with Wholemeal flour although the texture would not be as fine. It takes 2 days, so needs planning around. But it is a good bread.

I have bread mixtures on the go every day so I'm no longer noticing the 'Sigh, Two days for bread!" wait :)
I've used water instead of the water kefir before and it's turned out lovely.

How do you make water kefir? I have the kefir starter granules.

I put my granules in a jar, cover with unchlorinated water and add 2 tbls raw organic sugar. Then cover with muslin and a rubber band and leave for 24 hours. Strain carefully into a glass and put any grains which escape back into the jar. Fill water uncholorinated water/sugar mix and start all over again :)
