Something to do with the bananas lurking at the bottom of the fruit bowl
125g soft butter
220g caster sugar
2 medium eggs
225g SR flour
1 tsp vanilla extract
2 ripe bananas, chopped
90g walnuts, chopped, optional
Preheat oven to 180oC
Chop walnuts 5 seconds speed 5, set aside (you don't have to have walnuts if you don't want them)
Cream butter & sugar for 20 seconds on speed 5
Add eggs and mix for 5 seconds on speed 5, scrape down sides and mix for further 5 seconds on speed 5
Add SR flour, vanilla, bananas, walnuts and mix for 20 seconds on speed 5
Scrape down sides and then mix for a further 10 seconds on speed 5
Put into a greased/lined square cake tin - about 20cm and bake for 20-25 minutes.
CREAM CHEESE FROSTING (YUM!)
250g philly cream cheese
100g caster sugar
2 tbsp lemon juice
Put all ingredients in bowl and mix for 20 seconds on speed 5, then lather onto cake!
This one is delicious with or without the walnuts....
