Title: Using breadmixes in the TM31

Hi, all, we can only get baker's flour in 5 kilo lots and currently don't have the size of container to keep the flour in without getting weavels.  I'm going to a friend's place on Saturday and want to make the pizza bianca and have bought some Lowan bread mix.

My question is - do I just chuck the ingredients in altogether and knead it for 4 minutes as suggested in another post?

Hi there Jules, welcome to the forum.  Nice to see your first question is about breadmaking - it was ages before I tackled bread myself.  We have bread experts here on the forum so I will leave your question up to them.  I know Achookwoman (Chookie) uses a bread mix.

Jules I used bread mix as that was all I had originally. I would use it as though it was just flour.
Whereabouts in Perth are you ?SOR or NOR?

When I buy my Baker's flour (I buy 10kg bags) I just put it into smaller plastic bags, put a twisty tie on them and put them back in the original bag. Then if weevils come they will only be in one of the smaller bags and the rest is ok. I've never had that happen but you never know. It takes a bit to re bag it but it's easier than working with the very large bag.

Jules you can buy 2kg bags from bread making specialist stores, like all about bread and rising in the yeast I just use a 5.5lt decor bucket to store my flour. You can also buy buckets from the bread shops which have a great seal ;)

I have never used a packet mix myself so can't help with that sorry

If you place the flour into the fridge for a couple of days it will kill the weevil eggs so you can then keep it in the pantry. I live in Cairns and have to keep just about everything in the fridge including flour.

I buy 10kg bags of bread flour and separate it into 2 large containers.  I think they are decor brand (from the supermarket).  :)

just found this post as I want to use up my bread mix. so I am  going to give it a go as we have a 15 kg bag of the country grain mix to use from pre TMX days.  I note some of the posters to this thread are from Perth, Cash and Carry in Balcatta is great for large bags of bread flour or premixes, so cheap compared to the smaller bags from supermarket.

Thermomix
All of the All About Bread products can be used in a Thermomix
From the label determine what size loaf you wish to make, then load your Thermomix jug –
The amount of water to use is the lesser amount on the label and the water should be
quite warm but not hot.
Load liquids first, then flour then yeast on top. Should you be making your bread from
scratch, add the water then oil, then flour and then yeast, salt, sugar and improver.
Set the Thermomix on Interval for 3 minutes.
When the dough is ready, remove to a bowl, cover and leave for at least one hour.
Punch down.
Turn the dough onto the bench and lightly shape into a round.
Divide into two equal portions and shape.
Or roll the dough into a rope the same length as the tin and drop it in in one piece.
For rolls, divide into 12 portions.
Oil tin or spray with cooking spray.
Place one portion of dough at each end of the tin
Allow to double in size until it reaches the top of the tin
Bake for 30 minutes. If the bread appears too light in colour or not completely cooked,
return the loaf to the oven for a further 5 minutes. Allow the loaf to cool on cooling rack.
Electric: 220°C Gas: 190°C
Electric Fan Assisted: 200°C Gas Fan Assisted: 170°C

I buy a 10kg bag of bakers flour. My DS used to work at Boost Juice so I have a big plastic icecream/yoghurt container to store it in. They throw them out.
