Title: Ketchup from My Way of Cooking- Review

Pg 183 of MWOC
Easy recipe. Obviously not a completely smooth texture like store bought tomato sauce and a different taste than what we are used to. 
But we won't be buying store bought tomato sauce anymore  ;D was loved by all the males in the house (2small and DH) I loved it too.
We had just over 1kg (30/40g extra) of tomatoes but I recommend staying to the exact measurements as we had tomato spewing out the hole of the lid. Once I removed 1 MC of the mix it was fine. Cooked right down and the spices milled smooth at the end.
5/5 for us ;D

I totally agree with this Meagan - I made it the day before yesterday and it is an absolute winner.

I have yet to find a tomato sauce recipe that suits my tastebuds, so 5/5 sounds good.  Any chance of a recipe PM?

Meagan or cottchick, the recipe says it makes 2 jars but didn't say what sized jars they are - can you enlighten us please. Sounds like another item for the hampers.

I had some jam jars (not big ones but not the tiny ones) and it made 4 of those. Yes it would be prefect for hampers!!

I have a bowl of this cooking away now. The boys and I are fans of chunky homemade sauce (although the boys are crazy about relish on everything at the moment :o), but I still buy sauce for hubby. Fingers crossed he will approve!!!

Oh Cottchick, I'd love a copy too please (if it's not too much trouble). My daughter is addicted to shop bought tomato sauce and I'm yet to find a recipe for something similar to get her off all the 'extras' in it.

Judy mine cooked down quite a lot. I put half in a squeezy bottle and the rest in a jar. I think I should have looked at it towards the end of the second stage of cooking but was busy cooking sausages  :-)) the sauce was to have with our dinner as we had run out and I didn't want to go and buy some from the shops. I think they are 250ml jars so approximately 2 of this size or 4 100ml ones.

Gosh it does cook down a lot.  I think I should have stopped it a little earlier.  From a very full bowl of ingredients it cooked down to two quite small bottles full (recycled marinade bottles).  It is very thick and concentrated - just like the bought stuff.   I just asked Hubby to do a taste test and his response was "not bad".  I am happy with that! ;) ;D

I think it would be perfect for hampers if poured (or spooned) into sterilised bottles. :)

Can I ask pretty please for someone to send me the recipe too please. Has anyone with kids had a thumbs up compared to the store bought ones ? We've just run out of the store bought ones so would love to make our own too.

I think if it is in a squeeze bottle it helps ( I bought the decor ones from big w that are bpa free ) but I also kept a store bought one to use if the kids weren't keen on that one :)

This is great!  It only made one bottle for me for one of my hampers.  I photocopied the label from the book and stuck it on and will make a label for the back of the bottle describing the contents and putting a use by date.

I forgot to let you know how this went. Thanks Johnro for sending it to me.  I have made it twice now, the first time I included the Cayenne pepper and my eldest son thought it was too spicy, so I made a second lot and he's now working his way through that. He likes it but still asks for the bought one here and there but I just keep telling him we're not buying it anymore and he still eats the one I made (he'll get used to it). I explained to him that it's healthier for him and hopefully that goes some way to him liking it.

Oh and I used the first lot on pizza's (the kids ate it like that too as it was mixed with everything else). It was really nice on pizzas.

Did anyone find when making it though, with all the spluttering that happens in the first stage of cooking, my lid is very, stained from it and I've soaked it a few times but it's still there. It's mostly on the top side and the sunken section where it has the hole for the mc to fit in. I guess it will wear off eventually.

Oops. I forgot to add the 1 pinch of cayenne pepper to that recipe I sent you girls.  So you can either add it or leave it out if you take notice of what Debbie said.

I remember my lid being very dirty Debbie but it washed off quite OK and left no staining.  It will wear off eventually though.  I can remember with some other tomato saucey thingy I made and it got onto the white casing of the machine.  I thought it was stained for life but it eventually came off just by my normal wiping down of the whole surface after cooking something.

A couple of people have mentioned to me that they have found this sauce to have an unpleasant after taste and I wondered if it is the cooked honey.  I have copious amounts of tomatoes in the garden at the moment so last week I cooked a batch with rapadura but it wasn't sweet enough.  This morning I cooked a batch replacing the honey with 50g of water and 100g organic raw sugar and it was much more pleasant (no after taste) and even more like the commercial variety.  I know sugar isn't good, but this may initially help people to transfer their kids over to preservative-free sauce.  ;) :)

I was lucky enough to pick up 2.5kg large tomatoes this morning for $4 so will be making another couple of batches of sauce this week.

I just made this again today and because of how it stained the lid last time I rubbed some olive oil over the inside and outside of the lid and it's much, much easier to clean and hasn't really stained.  Just a tip for next time.  For anyone who hasn't made it before, it spills out to the top of the lid so hence you need to oil both sides.

We are back to the tomatoes everywhere stage so this, plus every other tomato based dish I can find has been made - Chelsea's consultant's tomato relish recipe is an accompaniment for everything during this time - yummmmm  :D  :D

if you like to make tomato based dishes (we live on them in winter either in the TMX or the slow cooker) then I can HIGHLY recommend Chelsea's Condensed Tomato Soup too.  :)

That soup from Chelsea is also a regular for us during the cooler months, faffa  :) - unfortunately we have not had any sign of winter in C.Q. yet already I have tomatoes in the freezer ready and waiting.  :)  :)

I finally made this yesterday with much success.  I did follow Chelsea's tip of using raw sugar and water instead of honey as in the past I have found an after taste when making ketchup which we didn't like, so didn't want to take a risk on this recipe. 

I only used 1/2 tsp sweet paprika and a small pinch cayenne and I would stick with this next time, there was a bit of a bite but not too much,  it was all rather perfect.

It has cooked down quite a bit like others have said, sort of tomato paste like, but it's really lovely and I can imagine using a dollop of it in cooking.

All in all  a great ketchup recipe that I am very happy with.  5/5.  :D

I would like to make this, but ds will only eat masterfoods sauce, is the flavour very different? Also it would have to be smooth, he hates raw tomatoes so any chunks would turn him right off.

It's very smooth Hally but I can't remember what the master foods one tastes like as it has been about 4 years lol.

What I did have to do with mine with the peanut butter was mix the two together for a while and slowly wean them back, you could try that with CP  if he didn't like it. It is a lot thicker than a shop sauce.

I get the old masterfoods (or which ever brand you use) container, clean it out and refill with the home made stuff. Have fooled them a lot with this   ;)

I've done the same with instant coffee- DS complaining that the store brand coffee wasn't as good as Nes***e - we had a jar of both, so I swapped the contents.

DS couldn't tell the difference even after I told him a few weeks later  ;)

I picked up a box of field tomatoes this morning (10kg for $18) and came home to make some sauce.  I made 5 batches of this and froze the rest in 1kg bags for another day. I replaced the honey again with 50g of water and 100g raw sugar.  I also cut down the cooking time as I think it is a bit too condensed. 35 minutes cooking in the first stage and 12 minutes cooking in the second stage was perfect.  It is the consistency of bought sauce now and not tomato paste. It made quite a bit more also. :)

I just made this yesterday too and loved it. Quite a few tweaks from me, and I meant to do Chelsea's tweaks but totally forgot.

So it's borderline fructose friendly (concentrated tomato itself can be iffy) but in principle is fine. I left out the onion and used brown sugar instead of the honey. Smoked paprika instead of hot paprika, so a big pinch of cayenne pepper. I thought it was fab and even Master 3 ate it quite happily.  NExt time would like to make it a bit runnier so will add the water + sugar combo Chelsea suggested.  I think the flavour is awesome - far better than commercial ketchups I have tried.

I'm desperate to try this recipe out. I bought some toms today with the plan of making the EDC ketchup but after reading all the reviews here I'd love to try this recipe. If its not too much trouble, please could I get a copy of the recipe?  I would be very grateful. TIA.

And it is delicious. Put it in a master foods sauce bottle and the kids are none the wiser. I think it tastes better.  Only alteration is that I put a chunk of crystallized ginger in it. Other than that, it was to the recipe.
