I have no idea what it looks like Zan, it is just shortbread with craisins & pistachios & is dipped in chocolate. Cookie1 & ILB both did it last Christmas so maybe one or the other will give you an idea of looks.

It's really nice. Very Christmassy too. I'm sorry I don't have a photo. If you find a recipe ( ;)) make sure you do mill the rice for the full minute. The first time I did it I thought my machine was on fire but it was only the rice dust from milling.

This is a call for help!! I thought the red & green shortbread sounded great, and made plans to make lots for Christmas gift giving. I tried my first batch tonight, and used a gluten-free flour mix (milled rice & sago with potato starch), but forgot to add xanthan gum - and they don't hold together at all. Next time, I won't attempt gluten-free - but in the meantime, does anyone have a suggestion for using my cranberry & pistachio biscuit crumbs? My daughter suggested making a slice, but I don't know how I would bind it together and I'm hesitant to add more butter when there is so much in the mixture already. Any ideas?

jarac59, I have the perfect use of those crumbs. I do a plum crumble with the following ingredients but any fruit could be used.
1 x 1kg carton plums, drained and chopped roughly. Place into 5 small ramekins (1/2 cup size) & sprinkle crumble over the top. Bake 10-15 mins 200oC.
Crumble as per recipe - 6 shortbread biscuits, 1 tspn cinnamon, 2 tblspns flaked almonds (you could omit these as you have the pistachios & cranberries in your biscuit anyway.
Coarsely chop the biscuits (not too finely) & cinnamon in a food processor then add almonds.
To serve - sprinkle with icing sugar and serve with ice-cream or cream.
I make up a whole packet of shortbread mixture and freeze excess in ziplock bags. So easy then to whip up a quick dessert.

You could also make the easy 40 second icecream and stir the crumbs through before freezing. Cookies and cream ice cream?? :)

Could you add an egg to the shortbread to bind it together? I know of a friend of a friend who had massive troubles with the Christmas shortbread not binding, so you aren't the only one.

I am going to try to make this tonight. I have never made shortbread before. Can someone explain how you cut the dough into biscuits? I don't have the recipe in front of me, but I think it says to roll it up in baking paper and cut into ovals... How do you cut through the baking paper ??? Sorry if it's a silly question ;D
Do you think I'd be able to press/roll it into a dough and cut out shapes, or would I be better pressing it into a pan and slicing it into 'fingers' (before or after cooking)?

I made these yesterday. I lined my bench top with baking paper and rolled the dough into logs on top of the baking paper (not wrapping them in it). I then sliced them into rounds and put them on a tray lined with more baking paper.
The only thing I will do different next time is chop the cranberries and nuts first and add them back in later. I think they would chop up better that way than using the turbo button when they are in the dough as suggested. :)
