Just moved to Australia in March, now living in Brisbane. Saw the TM and decided what a boy's toy so had to get one. Recieved the wee beestie just over a week ago and very happy. Really enjoyed and impressed with what i've made so far, to the point that I had to search for more recipes, and low and behold found this forum. now twice as happy. lots of good recipes and feedback (which you can't get from a book) - great idea and looking forward to expanding the repertoire.

Hello Alistair, welcome to the forum and to Australia. Bet you couldn't believe your eyes when you saw the amount of recipes on this forum, I know I was beside myself with joy 2 years ago almost and there are heaps more now than back then. I tired of the early books very quickly and love making recipes others have converted. Have fun.

Yep the forum is a wealth of recipes, I don't think I'll ever get through my pile, lol.

Hi and welcome to the forum Alistair. You have certainly unearthed a wealth of information and knowledge (from the supportive and helpful 'pros' of the TMX world) in discovering this forum. You may have to access all the wonderful sorbets etc in an effort to deal with the upcoming Aus summer.

Hi Alistair, welcome to the forum. I'm taking a guess that you could be from around Glasgow way ... but could be further north (that means I've pretty well got most of mainland Scotland covered). My husband is from North of Inverness and my parents are from Lewis and, much as I would also like to admit to being a Highlander, I was born in NZ and now live in Melbourne, but it's good to see the Scottish connection growing.

Well with a name like Aistair it helps to narrow down the country of Birth - being a good Scottish name. Originally from Aberdeen but having worked overseas for many a year i'm keen to try and adapt my favourite recipes to the TM.
If I can find some good smoked fish (undyed) my first conversion could be Cullen Skink (smoked fish soup) which is a favourite in the North East of Scotland wher it was developed. Any recommendations of where to buy Smoked fish in Brisbane area?

You may be hard put to buy un dyed smoked fish . If you have a BBQ you could smoke your own or maybe some butcher shop that has a smoking room could do it for you.

Belated welcome - hope you found some smoked fish. Maybe not as good as in Arbroath, but hey it's sunny here :D
