Hi All,
I was going to attempt to make Cyndi O'Meara's GF Bread today.. in time for a demo tonight (one of the guests is coeliac sp?)..
I've managed to scour around & find everything except White Glutinous Rice..?!?????!!!
Can this be substitued with anything else..? Was so looking forward to surprising this guest :(
Help!!!!??

According to this site salval, you can substitute it with risotto or short grain rice.

That's strange that you couldn't find it. It's in our local Coles & Safeway/Woolworths with the asian food section............

Thanks JD!! In desperation I did end up using Arborio... so we'll see how it looks when it's cut :)

I just used normal rice and it was fine.

I always just use normal white rice too and have not ever had a failure. I always mill my own chickpeas to make besan flour though, it goes racid very quickly and gives the bread a weird flavour.

I buy my glutinous rice from my local Asian grocery. I have also substituted short grain rice ie sushi type rice for the glutinous rice but it is not as sticky. I find the glutinous rice is perfect for deserts etc as it sticks together perfectly but if you don't have any, it it no big deal.

Crushing ice silent compared to chickpeas. I will measure the dB next time i do it. I believe we around the 100 dB.

Much louder Judy. It really is unbelievable. Have you made the soup (chick pea and spinach I think) in the VAroma book? That is where I heard chick peas the first time.

That show's you how good my memory is Cookie, I made that soup ages ago and obviously heard the noise but have forgotten it. :D :D
