Chocolate Whoopie Pies
Makes about 18 large ones
Ingredients
125g butter
150g chocolate (70% cocoa solids)
3 eggs
225g caster sugar
1 teaspoon vanilla
225g plain flour
75g cocoa powder
½ teaspoon baking powder
18 white marshmallows
Method
Oven 1800C. Line 3 trays with baking paper.
Make caster sugar if necessary in *:. Set aside.
Place butter and chocolate in *:. 500 speed ^^ or 1 until the chocolate melts. Remove from the bowl unless you have 2 bowls.
Place butterfly in *:, caster sugar,eggs, and vanilla. Speed 3/4 until the mixture is fluffy and well combined.
Pour the egg mix into the chocolate mixture and using a metal spoon carefully fold together. (I did this by hand)
Carefully fold in flour and cocoa.
Spoon 36 tablespoon size (I found this too big and will do smaller next time) dollops of the mixture onto the tray. They will spread a tiny bit.
Bake for 6 minutes until just beginning to firm up.
Remove from oven and leave for 2 minutes. Set 18 aside, flip the remaining whoopies over and sit a marshmallow on top. (I will use ½ of one for the smaller pies next time)
Return to the oven for 1-2 minutes to let marshmallows soften.
Leave to cool for a few minutes before sandwiching together with other whoopies. Mine kept slipping apart so I put a skewer right through to hold them until they cooled.
They can be dusted with icing sugar or cocoa.

ARGH they are calling my name - the only complaint i have about this forum is it is FORCING me to eat yummy things that my hips are holding on too ;D These look way too good to pass over!! (as i have all the other cakes, trying really hard to lose weight :-)))

DD had to work yesterday so I sent them off with her. She said the males were complaining that they were 'over the top' with richness but the girls all had 2 or 3 even though they were large.

I agree, they look wonderful Cookie. Unfortunately not all of us have DD's at home who can take goodies to work so that we don't have to eat them all ourselves :D :D Have you ever frozen them filled with the cream?

They do look very good Cookie.They are a new thing here and have only seen them forsale in one supermarket but are so much nicer if homemade. ;)

Judy the 'cream' is marshmallow. You could freeze the pies and then do the marshmallow bit later I think.

I quite understand, I often look at the photo and nothing else, especially if I shouldn't make it because of the calories.

I have made a few whoopie pies, they are all yummy.
The problem is the whoopie pie tins are huge, then you sandwich 2 together & its huge.
Cookies way of spooning them on is a good one, you can then make them to size.
I use my whoopie pie tin for Raras trippe choc muffins, kids love them.
