Does anyone have a good recipe for a marinade for pork spare ribs? I normally do a whole pork belly with apples and apple cider but this is the first time I found some ribs at the supermarket already cut up instead of as a rack of ribs. I suspect they would do well with a char siu type of marinade but if anyone has a good recipe for them, I'd be grateful. I might have to look up some of my Kylie Kwong recipes as the weather is getting warmer in Melbourne (finally) and I think an Asian type marinade would go better than a winter type of marinade.

This is my favourite from the WW chinese cooking book - not TMX though.
1kg pork spare ribs
4 tblspns BBQ sauce
4 tblspns honey
4 tblspns brown vinegar
1 tblspn chilli sauce
1/4 tspn five spice powder
1/3 cup dry sherry
2 tblspns soy sauce
1 clove garlic, crushed
2.5cm piece green ginger, grated
Put pork spare ribs in large saucepan of water. Bring to boil, reduce heat, simmer covered 20 minutes (this helps remove any excess fat).
Combine the above ingredients, mix well.
Put pork ribs into baking dish, pour sauce over, leave to stand one hour, turn occasionally.
Bake in mod hot oven 1 hour or until pork is tender, baste frequently
Serves 4 - 6

I don't eat pork well except for bacon cooked in a recipe could i use the marinades for chicken bits?? or is it best for pork??

When i prepare ribs, I also do my chicken wings at the same time. i use the marinades interchangably for both chicken and ribs. Blanching the ribs also ensures they are tender.
