Mushrooms with Bechamel Sauce:
Ingredients:
100g cheese, roughly chopped (kasseri, edam, emmethal, swiss.. etc)
700g mushrooms, sliced
2 tbsps lemon juice
Sunflower oil
Salt, black pepper
Bechamel sauce
500g milk
50g flour
25g butter or margarine
1/2 tsp salt
Nutmeg, black pepper
Preparation:
* Grate cheese for 10 seconds on Speed 7 and set aside
* Put all the ingredients for bechamel sauce and cook for 7 minutes at 90ºC on Speed 4
* While cooking bechamel sauce, warm a little oil in a Teflon pan. Add mushrooms and lemon juice. Saute for 6-7 minutes
* Put mushrooms in a baking tin. Pour down bechamel sauce and sprinkle with cheese on the top
* Bake in preheated oven at 170ºC for 20-30 minutes until browned a little

We had this last night. It is very nice farfallina. We all loved it. There is left overs for tonight too which is always good.

Looks very good, a nice variation is to fill the mushroom bechamel inside pancakes and then bake them with the cheese. Any other kind of vegetables also works, just steam them a bit before.

Ooh, I like that idea - a little filling goes a long way too in crepes.
