Cookie, each little ball of dough is slightly larger than a saucer and they are rolled out very, very thinly. It is lovely dough to work with, and they are sealed up very much like a cornish pastie only quicker. You don't need a lot in each, and it is surprising how filling they are. I cooked them on the sandwich grill, because they then didn't have to be flipped over and cooked on the other side like you would need to do in the frying pan. Worked a treat. Nice for lunch, or a light evening meal.

Some of the ingredient measurements are different than in the book, and I have posted only the differences all others remain the same:
Dough:
200g milk
150g Greek style plain yoghurt
600g bakers flour
Filling:
150g mixed cheeses
250g beef, chicken or lamb cubed
1 tablespoon plain flour
juice of one lemon
250g feta crumbled
(no ground paprika or cummin)
Everything is done in the TM

Not sure what the website said, but for this dough mixture you actually divide this mixture up into 16 small portions.

no, I think they are like $5 from consultants? I just looked on the HO website, and surprise surprise these books are not listed for sale...(wondering if somehow its Tenina related???) Look back on earlier posts in this topic and you will find the recipe link...

This is a copy of Tasty's review of this recipe, thought it best to put it with the others
I have been wanting to make gozleme since trying some at a Moroccan restaurant we went to recently and loving it. I got the recipe from the budget busters cookbook thanks to a kind forum member and put it on the menu plan and got around to making it yesterday.
They were delicious!! The pastry is quite easy to make and roll. The thinner you can roll it the better and you don't get holes in it!! Very good to work with!!
Although the filling was good I would change it to the one I had in the restaurat - pumpkin, spinach, saffron and feta. It is best if the filling is thin as the cubed meat didn't quite go.
Oh and this restaurant also has a thermomix!!
This recipe makes a LOT of gozlemes so have leftovers and I want to see how they work out when not done straight away.
I think I would also adjust the filling quantities for future too.
The lemon squeezed on top is a nice touch and really brings it to life!
There are quite a few other changes I would make for the filling so if I work out a good recipe, I might post it on here.
Give it a go though and it makes for a great entree for guests.
Here is the final result:
Now I just need to find a recipe for duck pastries!!

I was just going to pm you Tasty. You can't merge topics in these reviews which is what I tried to do so I had to just copy what you wrote and no, the photo will not copy. Can you pop it back in to your posting again please, it really shows what a gozleme is for those who don't know.

I was wondering which recipie you used? Tenina's, budget buster recipe or the modifications mentioned on pg 1 of this post? All recipies receive a mention within this post.
Looking forward to trying them, just also wondering (I get in trouble from hubby for too much wondering!) if the pastry/bread is almost like roti?

Buggerb - I used the recipe from budget busters (as mentioned in my review) :) I have only ever tried roti once and that was years ago but I think it is kinda similar.
Meagan - thanks for the price. I didn't think it cost much and will probably get it when I have my Varoma demo.

Budget Busters is my fav. TMX Official Book/ booklet. Tenina uses her Naan recipe for the dough. I have posted a Naan recipe and this is what I will use.

Hi, I have been making Farfallina's gozleme's recipe and it must be the difference in the flours between Europe and Australia but the dough is always too tight and i have to play with it... could you pls let me know the ratio of plain flour to water in the budget buster's gozleme's recipe. I don't want to to buy the book just for this. Much appreciated. thanks

Gozleme in budget busters is as under Courton
200g milk
1 egg
2 tblspns olive oil
150g greek style plain yoghyurt
2 tsp yeast
600g bakers flour
1/2 tsp baking powder
1 tsp sugar
1/2 tsp salt
Combine milk, egg, oil, yoghurt and yeast in TNM bowl and blend for 4 sec/speed 6. Warm for 3 mins/50/speed 2.
Add remaining ingredients and knead for 2 mins.
Add more warm milk if dough does not come together easily. Tutrn onto floured thermomat, wrap allow to prove for at least 30 mins.
Divide into at least 16 even sized balls and set aside whilst you make the filling.

Yum, yum and YUM!
We just finished eating this for dinner and just had to report back as it was cheap, healthy & delicious!
I used minced beef (minced by butcher) and only cooked it for 6 minutes and :-: ^^ so that the meat wouldn't go pasty...it worked well and I'll be doing it again next time. I think my handfulls of herbs might be smaller than the author of the recipes, next time I'll use heaps more.
We also cooked them on the plate of the bbq, so they had less fat (have to try and watch what I eat now I'm eating so many new things as a TMX owner!)
I even managed to take a photo....this is my first photo upload...hope it works!

I went to make these for guests today, however I remembered I'd lent my Budget Busters book (and a few others) to a friend at work :o
Thanks to Google I found this one (on RC) so I thought I'd post it in case others are interested in trying this fab recipe...

I made these yesterday for dinner. They're really tasty & cheap. The dough is lovely to work with. I used chicken thigh chopped small for my filling. I'll definitely make these again & I also want to make the dough again to try as a flat bread.

Delicious!
Made my meat eating family lamb gozleme whereas I made up some vegetarian filling with mushrooms and spinach.
I toasted them in the sandwich press...very quick, easy and clean ;)
Definitely make again.

I intended on making these tonight, but i got side tracked. I made the dough & split in to 16 balls. Rolled out 4 balls and cooked them in the frittata machine, nice & crispy bread for our dinner.
Have 12 balls left, anyone used them as pizza bases?

I was just having a look through the Budget Busters recipe and spotted this tasty-looking recipe.
Does anyone know how far in advance of cooking them I can make them up? I want to prep them early and take to a BBQ to cook and eat. Or do you think I'd be better to cook them completely at home and then just re-heat on the BBQ??? Probably that would be easiest from the host's point of view...but it says "serve immediately" so thought I'd ask here if anyone's tried it. :)
Any tips would be great.

I've made these a few hours before serving. The heat from the mince made the dough a little sticky, not a deal breaker though. To overcome this somewhat, you might cook the mince mixture in advance and let it cool before assembling the gozlemes and then separate them with baking paper for travelling :)
