I have just made ganache for my Torta Caprese and rather than looking creamy, looks cuddled. Any suggestions? I used Lindt 70% dark chocolate and cream. Thanks

tmfi, that's what I used, no problems. Could be the heat or water in the melted chocolate.

Strange. Haven't had problems following that recipe. Maybe water in the chocolate caused it to seize as Chookie suggested ?
