Title: Butter and Yoghurt making - milk & cream use by dates

Can someone tell me if you can keep your butters and yoghurts made in the tmx for longer than the useby dates on the milk and cream that was used to make it?

The topic JD posted is well worth a read Mel, the short answer is yes and yes. When you make yoghurt, you are effectively cooking the milk first at 80o- changes everything. The same for butter as apparently (I have only been told this and keep meaning to research it!!) it is the buttermilk that causes the butter to go rancid. Any how I have kept butter for MUCH longer than the useby date and always freeze my butter milk that I don't get to use.  :)

I never look at dates. That is what my nose and tongue are for.

Great thanks everyone - i had read that butter post, but couldnt for the life of me see the answer to my question!! (mind you i was looking quickly at work) - hehe.
