Wouldn't change a thing :D ('Cept I used sherry instead of brandy because that is what I had and it worked wonderfully).

Spectacular! Some more must have ingrediens to add to my shopping list for the coming week! I am so grateful to this forum for the generosity shown with all these wonderful tweaks and extra info ... I haven't made pate for awhile but remember a lot of pans and washing up was involved!

Yes folks I have tried pate, all different sorts. I have even made it. It just doesn't like to stay in my tummy. :P :P :P I have no trouble finding lots of lovely things to eat. ;D

made this to take along as part of a platter. it makes a hellovalot and i am not sure what the shelf life is? can anyone enlighten me? not many people ate it, though when I asked if it was ok they said it "was beautiful"... (there was a lot of other food there as well, and I walked away like a stuffed pig but I don't know what I can do with this pate as we are not big eaters of it). I may have to content myself with this as an afternoon treat to get rid of it :'( :'( :'(

You bet creampuff. You can line some small ramikins with plastic wrap, decant the pate into them and freeze. Remove when frozen and you will have a bag full of little hockey pucks to keep and defrost as needed. Or you can do one big one. Freezes beautifully and can be reformed when defrosted into any shape or container.
I always have some for a quite snack when someone unexpected calls in for drinks as it defrosts in no time at all. If you don't like that look you can roll into logs and coat with chopped nuts and freeze.
Good for breakfast on toast. Don't waste it.

Gretchen, I made a slight variation on your recipe, using duck livers, and it turned out really well.

I don't find freezing it works:( And once covered with butter it is meant to have a 3 month shelf life. I don't find that true either:( I generally do a half batch or pack it up and give it away. Do love it though.
