Title: Spinacine (with photo)

Another chicken recipe.. Don't be surprised if soon I start clucking  :D :D :D



Spinacine:

Ingredients:

35g parmesan, roughly chopped (optional)
500g chicken breast, chopped into mid size cubes
120g frozen spinach
1 egg
20g flour
Salt

Top
1-2 beaten eggs
Bread crumbs
Extra virgin olive oil



Preparation:

    Take spinach previously out of freezer to defrost (or defrost in microwave). Squeeze out the liquid by your hands (Drained amount will be approx 50-75g)
    Grate parmesan speeding up from 2 to 9 for 15 seconds
    Add chicken cubes and chop for 15 seconds on Speed 7
    Add spinach and mix for 10 seconds on Speed 4
    Add egg, flour and salt. Mix for 10 seconds on Speed 4
    Cover oven tray with baking paper. Get pieces from the chicken mixture, roll and flatten out.  (You can wet your hands to work better or you can use an hamburger press. I get 8 pieces in total, approx. 9cm wide)
    First coat with beaten egg and then bread crumbs. (If you wish coat one more time with beaten eggs and bread crumbs) Place them in oven tray.
    Spray or drizzle with very little oil
    Bake in preheated oven at 180ºC for 25-30 minutes (After 15 minutes turn them upside down and continue cooking)

Tips/Hints: If you wish you can fry them as well.

These look tasty Farllina, I bet the spinach makes it really moist.Another wonderful recipe to make in the future!

They are not so moist Cornish Cream. It might be because when I squeezed spinach I squeezed not only water but the life out of it! :) :)

Yes JD, could be used as chicken burger. It might be better to fry them if you want them in your sandwich rolls  ;)

hello gorgeous farfallina. you seem to be sticking to your non-fat diet ( :'() your food looks yummy, but I think I like the fatty things  ;D ;D ;D

Yes CreamPuff, diet is still going on  :'(

I want to eat cheese and cakesssssssssss :)

In fact I am not that fat. As of today I am 52kg
My husband needs to lose a little weight and I kind of keep him company
I need to eat healty too because my cholestrol is a bit high because I am very fond of cheese  :-[

Farfallina it is very nice of you to help your DH. I love cheese too. That is my downfall.

52kg! those were the days  :'(

i love chicken too - its so versatile, there are so many different ways to cook it. Going to post a recipe if all goes well that we're trialling tonight  :)

Great idea farfallina - ma perche spinacine ?  I thought it was going to be fettucine made with spinach!

They do look good ( & healthy if not fried !)  :-* :-* :-*

Well I don't know exactly
All I know is there is a product of a brand here which is called as spinacine. Maybe that's why ;)
