It is a soup for the ones who look for something different to cook and for those who like raw spring onion taste....
Spring Onion Zucchini Soup:
Ingredients:
5-10g parsley leaves
70g spring onion, roughly chopped incl.green parts
90g red onion, quartered
100g potatoes, roughly chopped
45g Extra Virgin Olive Oil (35+10)
750g zucchini, roughly chopped
20g Thermomix vegetable stock
650g boiling water
Preparation:
* Chop parsley for 5 seconds on Speed 7 and set aside
* Chop spring onion for 3 seconds on Speed 7. Repeat it twice
* Add 35g EVO and mix for 10 seconds on Speed 4. Set aside
* Chop onion and potatoes for 5 seconds on Speed 5
* Add remaining 10g of EVO and cook for 3 minutes at 100ºC on Speed 1
* Add zucchini and chop for 7 seconds on Speed 5-6
* Add veggie stock and boiling water. Cook for 15 minutes at 100ºC on Speed 2
* Add chopped parsley and salt if needed. Blend for 1 minute on Speed 6-7
* After serving into plates pour onion-oil mixture on the top

Sounds interesting. The spring onion mix is like a spring onion oil to flavour the soup? I like spring onions, so may use the oil idea.

Spring onion oil? It is something that is sold? I've never saw or bought

No, not one to buy - just seen it used in some Chinese dishes like you did, but strained, and added at the end.

My feedback;
I made this tonight and found the soup on its own prior to adding onion/oil mix quite bland.
I used flat leaf parsley and it was a bit too much for my taste. I think next time I will use a bit less parsley.
I did use pumpkin instead of potato because that is what I had on hand.
I think using potato would give it more body than what I experienced because of the starch.
I think next time I will try more veg concentrate, and maybe add some garlic and chilli.
Zucchini is quite a bland vegetable so needs a bit of oomph!!
I enjoyed the zing the spring onion provided.
