I believe soy and linseed bread is low GI. You have some sourdough bread recipes without oil but I'd like to know how to make them without salt, I know you can use ascorbic acid in conventional bread as a subsitute for salt but I was told that won't work with sourdough bread.

This is our favourite bread recipe here (http://www.forumthermomix.com/index.php?topic=927.0). My understanding is that it is low gi because of all the whole grains and seeds, and we try and eat low gi as much as possible. It's a delicious bread, with lots of flavour.
I believe that salt helps preserve the bread, and that the oil helps with texture. So maybe you can try the recipe without and swee what happens.

Dgg9879, I make most of my bread without oil, (both sour dough and dried yeast). The salt prevents the yeast from developing too fast. I would still put a pinch of salt in if this is allowable. Low GI, I don't know much about.but I often make LSA and add 20g to most loaves. Good luck , let us know how you go.

Tuscan bread has no salt - but it is not low GI. I love salt sorry. Wonder if the www.sourdough.com (http://www.sourdough.com) site may have recipes?
