Title: Mini Sandwich Rolls (with photo)

I adapted this one from Pan Brioche/Sandwiches recipe in Io e il mio Bimby Book with some modifications
We like them so much I make them quite often

I sometimes use bread flour, other times all-purpose. They are both OK

After I bake them I cut them in half and fill inside with some cheese, cherry tomatoes, olive pate etc

Mini Sandwich Rolls

Ingredients
250g milk
550g bread flour (I use also all-purpose sometimes)
25g fresh yeast
10g sugar
60g EVO
1 egg
10g salt

1 egg yolk (to brush on the top)
Sesame, nigella, poppy seeds (optional)


Preparation

    * Warm milk for 1 minute at 37°C on Speed 1
    * Add yeast and mix for 4 seconds on Speed 4
    * Sift in flour. Add sugar, EVO, egg and salt. Knead for 4 minutes
    * Cover oven tray with baking paper. Get pieces from dough, roll into a ball shape and place in the tray (I get around 25 rolls. You can make them a little bigger or smaller as you wish)
    * Let them rise for 1 hour. (In winter it might take a bit longer)
    * Brush them with slightly beaten egg yolk and sprinkle with sesame, nigella and/or poppy seeds
    * Bake in preheated oven at 180°C for 20 minutes

they look lovely farfallina. Chef Laurent "Cooking for Families" p85 also has 3 x filling suggestions:
Smoked Salmon, Vegetable, Ham and Brie

Farfallina,  these look great.   Will try the recipe tomorrow.   With small rolls, I usually cook them in muffin tins.  Yours seem so neat and round,  you probably don't have to do this.

Yes fussykidsmum, it is extra virgin olive oil as judydawn said
I often write the abbreviation to type less since I am lazy :)

achookwoman, the dough will have just right texture to work with your hands. If needed you can just flour your hands a bit, that"s all. You roll them into a ball shape the size you wish. I usualy make around 20-25 rolls. Sometimes I make less when I need them to be bigger. After baked, most of the time I fill them with cheese, pate...etc. I hope you like them ;)

Hi Farfallina,  I have had a "Farfallina" cooking morning ;D ;D ;D ;D   I made your Mini sandwich Rolls,  as I was looking for something suitable for the grandchildren's lunch boxes.   I made 6 medium sized ones and 12 tiny ones.   They have a lovely soft crust and expanded beautifully in the oven.  I think they will like them. I also made your Poppy Seed and Walnut Bread.  I will comment on this under that post,   Thanks for posting there recipes as it is always good to try something different.

I hope your grandchildren like them as much as we do
I often make them as snack or when we go to picnic
I believe they would be great also for lunch box

They really do look great farfallina - it looks like the rolls I was making at the local restaurant.  Only wish they let me use the TMX.  They insisted on hand kneading 5 times 15 minutes apart !!!!!!!!!

I would have sacked myself from that job Thermomixer - hand kneading is not a word in a TMX owner's manual. Pity they wouldn't let you prove that the TMX could do just as good if not better.

My God Thermomixer! I am not familiar with kneading anymore after Thermomix
On Saturday we had a pizza night with family and friends at their field. Our friend's mom was supposed to knead pizza and bake. They have a big semi professionel oven to bake pizza. I offered to bring Thermomix. We did all kneading with it. Pizza base was so tasty  ;)

A pizza party - that does sound like a good idea.  I have seen people allowing kids to top them for cooking, but if you had enough then they could do it all themselves with the TMX/Bimby

Thank you for this recipe! I made it this morning and I thought I'd let you know how it went!
I was a bit nervous as the other bread I've made has been hard & the kids (and us, really!) didn't really like it.
Because of this, I was generous with the olive oil, and because I knew I wouldn't prove it as long as I should, I was generous with the yeast as well. The dough had a lovely texture, I could tell it would be nicer. After pulling the dough out of the TM, I put Parmesan, cheddar, tomato paste, fresh red capsicum and some leftover salsa into the TM and blitzed it into a paste, this was again to save me time. I patted the dough out to a rectangle, spread the dough with the paste using a silicone spatula, used a longer side of the bread to roll it up snail like, carefully cut it into 1-2cm sizes, placed them on baking paper lined tray, covered them with the bread mat, put this in the oven on 'low' to rise, then pulled the mat off and lifted the temp to cooking temp. They cooked beautifully in the 20 mins and were soft and lovely to eat! I stored them in brown paper bags and they were still great at lunch time!

I am so happy to hear that you enjoyed this bread recipe
I make it very often too, it never failed me
I usually make simple bread rolls as you see in the pics
My sister in law divides the dough in half and using 2 pans bakes two large ones
Then cut each in half and fills as she wishes.
Some day I make that way too, take pics and share with you.
