I have a couple of queries on the vege stock concentrate:
The recipe calls for rock salt - can I use other salt, e.g. the lovely Murray River pink salt flakes?
Oil - can I use Olive Oil or do I have to use vegetable oil?
Looking forward to help as I tend not to be creative when following a recipe!

Any oil and any salt is fine!

Yep - any! That would make it extra good. I always used my good local cold pressed olive oil. ;)

ROFL I never noticed that it had vegetable oil in it - I only use EVOO ;D

Double ROFL. Me either I always reach for the EVOO.

I only use EVOO in things that aren't cooked, such as salad dressings. EVOO doesn't heat to a very high temperature without oxidising. I use Sunflower and Rice bran oils.

another EVOO user here.... and I use pink salt flakes as well! ;D

sammidog I made my first lot of veg stock concentrate about 3 weeks after I got my TM and now won't be without it - the stuff is marvellous. Always have a large jar of it in the fridge. The first lot I was too frightened to put that much salt in it - but the second lot i made I just followed the recipe and used the full amount of salt and its even better!

I only ever use this for my stock now. I even pass it to thermomixless friends. They love it too. It can turn a poor soup or risotto into a marvellous one.
