Title: Two Colored Chicken Loaf (with photo)
Post by: farfallina on June 16, 2010, 10:37:26 am

I hope you like this colorful chicken dish :)

Two Colored Chicken Loaf:

Ingredients:

2 omelettes, prepared with 3 eggs (1,5 eggs each)
100g parmesan, chopped roughly
500g chicken breast, chopped
250g ricotta
Salt
150g ham slices
EVO
White vine

Preparation:

    * Prepare your omelettes as you wish, they shouldn't be very thick though. (I made one with cheese-spinach and the other with cheese-sun dried tomatoes)
    * Grate parmesan for 15 seconds speeding up from 2 to 9
    * Put chicken in TM Bowl and mix for 20 seconds on Speed 5
    * Add ricotta and salt and mix for 10 seconds on Speed 5
    * You will have a soft texture. Roll out around 25x40cm on wax paper by your hands.  (You can flour your hands a little if needed)
    * Cover it with ham slices and then place your 2 omelettes side by side over the ham slices
    * Roll it into a log shape with help of the wax paper and close the sides nicely
    * Cover oven tray with wax paper. Put your chicken loaf in the tray. Drizzle with some EVO and vine. Cover the tray with aluminum foil.
    * Bake it in preheated oven at 180°C for 50 minutes – 1 hour about. (After 30 minutes passed remove the aluminum foil and continue to cook without)

How good does that look, nice one farfallina.  Great meal for summer with a salad.

I can cook it often nowadays over here:)

When you mentioned of salad you reminded me of something that I forgot to write
Yes, salad is just great!
Besides salad, if you want to serve it with something else I recommend you not to serve with something that has a "dry" taste
Because the dish's itself is kind of dry

We had a consultant make a roulade for their go getters talk at our branch meeting on Monday night. Was yummy and was good to see egg whites actually work in the TMX - will post her tips now that I think of it. She used the butterfly on speed 3 at 37O for 4 minutes and the MC out. Got a good bowl full of whites  ;D

There is one recipe also in Italian EDC Book Faffa. Let me write down from the book

- 2 egg whites at room temperature

Insert Butterfly in a clean and completely dry TM Bowl. Put egg whites and whip for 2 minutes at 37ºC on Speed 4

Advises:
- If the eggs are very fresh it takes 1 minute 30 seconds to whip 2 egg whites
- You can whip also without using temperature but it's better if you use
- Be careful! There shouldn't be any egg yolk parts left inside. Otherwise they won't be whipped very well
- The duration will change due to the numbers of eggs used. You can whip up to 10 egg whites

This is what's written in the book

Thanks, I made a roulade and was hoping to cook it in the Varoma like you do an omelette, but it is small - OK for the 2 of us.

I didn't try Varoma for this one Thermomixer
If you divide in half maybe it'd fit in
You cook half amount since you are 2 or half in Varoma bowl and half in Varoma tray
But i am just talking hypothetically
As I said, I didn't try ;)
