Rhubarb Cream Pie:
8-12(depends how big a slice you want!):
Ingredients:
Pie crust - I had Julie O's beautiful pastry http://www.forumthermomix.com/index.php?topic=2638.0 (not pre-baked)
200g Sugar
50g flour
1 flat teaspoon nutmeg
3 eggs
400g chopped Rhubarb
Preparation:
Preheat oven to 190oC
Put sugar, flour and nutmeg combine at speed 4 and while it's running drop eggs through lid for 15-20 sec.
Add rhubarb and stir on :-: speed 1 for 15 sec.Pour into pie crust. I added lattice top as I had left over pastry but not necessary. (If you do add lattice top brush with egg yolk and sprinkle with sugar.)
Bake for 1 hr or until golden.
Serve with lashing of fresh whipped cream!!! ;)

ellie j - Just back from a night out with friends and I took this pie .... Yummo it was a great hit ..thank you so much , will be making this again for Easter Sunday family lunch.
Chelsea - I made a half batch of this recipe today and it worked well. I used 2 small eggs and substituted the nutmeg for mixed spice which was yummy. I chopped the rhubarb quite small as the cooking time was reduced by 20 minutes. For the pie crust I used Chookie's Belgium Lemon Teacake (http://www.forumthermomix.com/index.php?topic=2475.0) crust. It filled my smallest pyrex pie plate perfectly and still made enough to serve 8. Such a lovely recipe Nay.

That looks so yummy. I just happen to have a bunch of rhubarb in the fridge that needs using up too. :)

mmm I have rhubarb in the fridge as well. Was going to make cake with it but now not so sure..............

Oh...............golly. I had a heap of rhubarb and made it into Rhubarb cake. The next lot I'll give this a try. Anything that has to be eaten with a 'dash' of cream must be nice.

love how you have done the top of the pie - certainly looks like a pie that a cartoon Granny would have resting on the kitchen window before some hungry bear comes a long and nicks it ;D

How do you think this would go as an Apple Cream Pie, I would reduce the sugar a bit?

I've not made this one Chelsea but going back to the link for the pastry, it wasn't prebaked in Julie's recipe. I googled some rhubarb tart recipes and most were not pre-baked either.

Haven't had rhubarb since I was a kid. Don't seem to see in it the shops any more. This looks like a great recipe though. Anything served with lashings of cream has to be good. Going to ask the local shops about rhubard as I really would like the kids to try it.
