Hi everyone,
This is a recipe from my mother-in-law. I believe that also children would love it as much as adults! Since you don’t have to fry, it is also quite light.
With this recipe I had 18 chicken meatballs
Chicken Meatballs with Corn Flakes:
Ingredients:
50g parmesan
230g chicken breast
1 boiled potato (100g)
1 egg
Enough salt
Corn flakes to coat with (I used Kellogg’s to be precise)
Preparation:
Cut parmesan into chunks and grate it for 15 seconds speeding up gradually from 2 to 9
Clean the chicken breast from the nerves if there are any. Cut it into 2cm chunks and mince it for 15 seconds on Speed 9.
Cut the boiled potato in quarters and put it in the TM bowl together with the egg and salt. Mix it for 20 seconds on Speed 6.
Put the corn flakes in a plate.
You will have a bit sticky compound. So get pieces utilizing two dessert spoons, coat them with corn flakes by rolling in the plate and place them on the oven tray which is covered with wax paper
Cook them in a 180°C preheated oven for 15-20 minutes.

However she doesn't have bimby. So I have my advantages as well! ;)

She must really love il suo bambino if she gave you a Bimby when she doesn't have one.

farfallina going to make this tonight as I am in a Turkish mood for Turkish food (and seeing as your biscuits have ALL GONE :o since I made them yesterday).

This one is not from traditional Turkish kitchen although also Turkish people cook such recipes. My mother-in-law, who gave me this recipe is italian :)

I wanted to send the recipe for Cornmeal-Coated Fried Chicken Balls but I didn't want to open a different title because it is mainly same with this recipe
The only difference is that you coat them with finely milled cornmeal (maize flour-polenta) instead of cornflakes and then you just fry them. That's all!
They are is so delicious!
When you prepare this you can coat half with cornmeal and fry, the rest with corn flakes and cook in the oven so it would look like you have 2 different dishes and your table would look rich :)

I have been cooking chicken meatballs for a long time but i never coat them. But what tastes good is to add some different grated vegetables like carrot, courgette, onions, sun dried tomatoes or red peppers.

Let me know how they come when/if you make them by adding some grated veggies bluesed.

Its not like i use a recipe but i will write down next time i cook them.
Usually i would use both carrot,red onions,sun dried tomatoes and courgette. I add 1-2 eggs depending on the amount of chicken only to make them stick together. I dont use breadcrumbs as i dont think its needed but can be added if you like.
I add spices like parsill, cilantro(is that like koriander, sry my bad enlish) salt and pepper.
Instead of rolling them in cornflakes or flour/bread crumbs it would boil them directly in a nice coconut curry sauce with more vegetables. If you find that the texture is to solid you might want to add a bit of breadcrumbs to the meat.
Make sure to fry one and taste it before boiling all of them to make sure that they have enough salt and flavours!
PS To shape the any kind of meatballs the easiest way is to have a bowl of water and keeping your hands wet when shaping them in the hand!
