Name of Recipe: Vege laden pasta sauce
Number of People: ALOT (makes almost 2 litres)
Ingredients:
3 cups mixed veg (try to use as many different types as possible but avoid leafy greans as they are hard to hide)
1 red onion
2 cloves garlic
20 g olive oil
1 tsp thyme (fresh or dried)
1 tsp oregano (fresh or dried)
1/2 tsp paprika
800 g tinned tomatoes
2 tbsp tomato paste
TMX vege stock concentrate to taste
Preparation:
1. chop veges in *: speed 5, 5 seconds, remove from bowl and set aside.
2. chop onion and garlic speed 5, 3 seconds.
3. add 20 g olive oil and saute onion and garlic for 2 minutes, 100 degrees, speed 1.
4. add herbs and paprika, continue to saute for a further minutes, 100 degrees, speed 1.
5. add veges, tinned tomatoes, tomato paste, TMX stock and cook for 15 minutes, 100 degrees, speed 1, MC tilted.
6. When cooked, blend to desired consistency.

Adapted from recipe from Feeding Fussy Kids. The original recipe has 3 fresh tomatoes but I didn't have any so left them out. The original didn't have TMX concentrate either!
This is my first conversion - please forgive any errors but I think it should be fairly straight forward!

Love this recipe, just hadn't got around to posting it. Good conversion VYY.
It's a great recipe to use as a base for spaghetti bolognaise or lasanga. Last time I made the sauce I froze half, set aside half in the thermoserver, then browned mince and added it to the thermoserver, then cooked the spaghetti.
A delicious sauce with lots of hidden vegies.

P.S - I can't see where to add the vegies back in to cook.

Yes stage 5 - I've added that in. I knew I'd forget something! Yes Cathy it's a very tasty sauce isn't it? I was really surprised.
