Title: Sour cream and chicken enchiladas-Meat on the Menu

made these for dinner tonight & they were fabulous. Instead of sour cream I used Isi's creamed cheese (yummo - thanks Isi  :-*) and instead of chilli I used a slightly spicy red pepper that a friend gave me from her garden.

Did you make the tortillas aswell? Just bought this book and it looks pretty good.

I have made these, with shop bought tortillas, and while the flavours of the chicken mixture are fantastic, I didn't like the soggy texture of the tortillas. When I made it again, (as it was so yummy!), I used rolled up lasagne sheets instead of the tortillas. Next time, I'll try filling canneloni tubes if I can find large ones. It would be too fiddly with normal size ones.

Making these today, wondering whether to make tortillas or pasta.

H  I don't have MoM book so not sure what type of tortillas they call for but as a regular enchilada maker I can say my tortillas never go soggy. Enchiladas should be made with corn tortillas not flour. I think if you made them with flour tortillas they would go soggy.

Thanks DD, I dont have corn tortilla flour, I use my regular flour.

Another day thenas I am nearly up to my $100 budget.

Do you make your own  tortillas & if so would love the recipe.

H I posted a recipe for easy beanies with arapa I the vegetarian section. Tortillas are similar. I used masa harina. This is a corn meal cooked in a lime wash to make it more digestible. I got mine from kakulas in north bridge. They only have white but it comes in yellow and blue.

Made these last night to feed 7 adults and two kids. I upped the chicken breasts to 4 and swapped the olives for 250g sliced mushrooms. This made enough filling for 16 tortillas (shop bought normal size). Served them along side more sour cream, home made guacamole and home made hot salsa. The whole meal was a huge hit with all the adults and the 6yr olds. It was a perfect amount with one left over for my lunch today :)
Will definitely make these again.
Oh also a great make ahead dish. I made them first thing in the morning, popped them in the fridge for the day then reheated in the oven until hot before serving.
