Hello !
I would like to make some carrot and coriander soup and wondered if anyone could give me a good recipe for it. Apparently there is one on page 71 of the Australian book but is definitely not in my French Thermomix book. Thought I'd ask here before I improvise...

This is the one from our book Lemongrass - I can't vouch for it as I haven't done it myself.
1 tblspn rice or lentils
1 tsp sugar
1 piece lemon or orange rind
2cm cube ginger, peeled
230-350g carrots, peeled and roughly chopped
1 sm red onion, peeled and halved
300g water plus 1-2 tbsp TM vegie stock concentrate
300g milk
S & P to taste
50g butter
1 good size sprig fresh coriander
2 MC cream
Place rice or lentils, sugar, rind and ginger into TM bowl and grind for 10-20 seconds on speed 9.
Add carrots and onion and chop for 5 seconds on speed 7.
Add stock, milk, salt, pepper, butter and coriander. Mix for a few seconds on speed 6 to combine and cook for 12 minutes at
100o on speed 1.
Blend for 30 seconds by slowly going from speed 1 to speed 9. Add cream to taste and adjust seasoning. Mix for a few seconds on speed 4.

Hi there
There is one in Fast and Easy Cooking:
Serves 4 to 6
30g lentils
1 thin peeling of lemon rind
2cm fresh ginger, peeled
300g carrots, each cut into 2 or 3 pieces
1 small onion, approx 50g, peeled
50 butter
chicken or veg stock (or water plus 1 stock cube)
half tsp salt
freshly ground pepper
5g coriander, plus a little to decorate
100g milk or 120g cream
3 tbsp (English recipe so 15ml) cream to serve
1. Grind lentils, lemon and ginger on Speed 10 until fine.
2. Add carrots, onion, butter and stock cube if using. Chop a few seconds/ Speed 4 1/2. Scrape down sides of the bowl with spatula.
3. Add stock to the 1 litre mark on the TM bowl, salt and pepper. Cook 15 minutes/100C/Speed 2.
4. Add coriander and milk/cream. Puree 1 minute/Speed 9 until smooth. Tip: if it's still grainy add 100g water, cook 2 minutes more then puree again. Adjust seasoning and pour into warmed soups bowls, swirl in cream and garnish with extra coriander.

I have just made this using the recipe from Fast and Easy Cooking. Had a taste before I put into the freezer for later and I think it will be a winner, lovely flavours I thought. :)

I made it without adding the butter, and even though it wasn't bad I'm sure it will be so much better with butter next time...
