Title: Home Made pasta shapes

Hope you don't mind me putting this on here but I had to share my excitement.  I purchased a pasta press attachment for my KitchenAid mixer from the US last Friday and it was delivered yesterday.  Was so excited to try it and followed their recipe for the dough and simply put it all in the TM and kneaded for 2 mins.  Just had to bring together with my hands and knead slightly into a ball.  Pulled pieces off and shaped into smaller balls ready to go into the hopper.

I'm making macaroni cheese for tea tonight, so chose the large macaroni shape disc and used up the last of the dough making fusilii (spirals) just to see how they came out.

I am so impressed with it, was so easy to use and the cutter is great as it cuts off whatever length you want your shapes.  The macaroni shape will make a perfect penne if left to extrude a bit longer.  It comes with 6 discs for different shapes I really can't wait to make more.

The booklet tells you that you can air dry them, then store in glass jars indefinitely (except for wholemeal - only 1 month) in a cool, dark cupboard, so I dried the lot today and put away in a cupboard but will use some tonight.

Do you use your KitchenAid a lot?  My friend has decided to buy one instead of a TMX.  She said they do roughly the same things so is saving money.  I don't really know much about KitchenAids (and am still madly in love with my TMX) so haven't commented. :)

That looks great JulieO.  I have an older pasta extruder for the KA and the shapes come out the side.  This is more intelligent to have them come out below.  Much easier to cut them off into regular lengths.   I don't need one.............. but?

Chelsea, No I don't use the mixer much really.  If I'm going to make a cake or pavlova then I will use it, I'd be silly not to, it's very good at what it does, but it can't do what the TM does.  Sure you can buy other attachments to slice veg, juice, mince meat (Tm is better as long as meat is partly frozen), stuff sausages, roll pasta and cut into spaghetti & fettuccini, and now the shape press, but they are all an additional cost on top of the mixer, which in itself is around $700.  I guess it comes down to what  is more important to you.  I already had the KA so didn't have that dilemma, but unless your friend is going to buy some of those attachments right off, basically she is only going to be able to do what a mixer does - mix.  I wasn't very impressed with the dough hook, some people swear by it, but I found it didn't do a very good job, certainly not like the TM can do. (dough hook does come standard).  I feel very lucky that I have both and can use each to it's best potential.  :)

Thanks Julie.  I was pretty sure that KitchenAid's don't have a heating function and are more of a mixer (although a very good one), but thought perhaps I was wrong.  It's fantastic that you are able to use both.  :)

That is very exciting :o I have a KA and the pasta roller attachment,  but being able to do your own spiral and tubular pasta is fantastic!!

I have  been toying with the idea for a little while, about getting the basic pasta press for the KA....and have since discovered all the different pasta attachments available  :o  I had no idea there was so many.
Just keeping my eyes open for some good specials  ;)

oh gee, I love all the purty colours that KA has and everyone raves about them. I just know I will have to work abit harder and get one. i think i can justify it....???? !!!!

Wow how amazing Julie  :). I have a pasta attachment for my juicer, but only for tagliatelle and spagetti and no  space for a kitchen aid   :'(

Oh my!!!   :o

I make pasta but had no idea you could do that!!!!  I'm sooooo impressed.

I've got a bench top pasta roller that I picked up from the op shop for $10 yrs ago and it's great but can only do sheets, fettucini and spaghetti. I've got a Kenwood but dreamed of a nice red Kitchen Aid on my bench (well until I got my TM that is.................)

Looks amazing though - well done Julie.

Maddy and JD,  you are both such nice ladies.  I tried to look and came up with nothing,   Now you have provided me with the site I can look and see what best suits.   I have all the bits for mincing and making sausages,   and a pasta rolling machine ,  but would love one that makes macaroni.

Judy, it's easy. Just click in the box at the top of the screen where the URL is and then hold down your 'Ctrl' button on your keyboard while pressing the 'c' key. This copies the URL to your clipboard. Once it's copied to your clipboard, you can navigate away from that page, or close it completely.
To paste the copied URL, go to your reply box and click in the box. Hold down the control button again and click the 'v' key.

How do you know what model your kenwood is? LOL

Chookie, I made some fusilli today (spirals) and they are drying at the moment.  Will take a photo later, I'm so happy with them.

When I made the dough the other day I used OO flour as that is what I always use when making pasta, but as the manual says to use plain flour, thought I'd try that today. It made the mixture so much drier than the other day and I had to add a  little more water to bring together best I could, but it was too difficult to really knead properly. Anyway, I started making the fusilli and some of the shapes weren't properly formed, still had the shape and markings on them, but not twisted.  No matter, as they came out, I quickly gave each one a bit of a twist (not a hardship) and put on the tea towel to dry and carried on. 
You add more dough to the hopper at the top when it's getting low.  Next minute the shapes that were coming out were perfectly formed I was amazed.  Kept adding more dough, then some were not so formed.  It's got me a bit puzzled, but I'm tending to think it was because some of the dough would have been more properly kneaded than some of the other.

Certainly not a big issue as it was easy to give a little twist as we went along, but next time I make the dough, I'm going to divide into either 2 or 3 pieces and try and give each one a good knead.  I found one big ball too hard to handle for my size hands, plus I'll go back to using the  OO flour.

I want to perfect making them, after seeing that it can do them perfectly.  It's obviously something I'm doing or not doing correctly, but with more playing around hopefully I'll suss it out.

I found even though this was only the second time using it, how much faster I was, knew what I needed to do without referring to the manual.  Can't wait to try some of the other shapes now, maybe tomorrow?  :D

Ok here are a couple of photos, the second one shows at the bottom, 3 of the twists that I helped along.  I've also noticed that the colour of them are paler than the good ones.  As you can see not a huge difference but the good ones didn't have to be touched at all this is how they came out.

I have an old Kenwood Chef 701A and it isn't compatible with the newer attachments... I have quite a few of the original ones though and I still use it occasionally for cake making as well. :)

I didn't think mine would be compatible with the latest and greated CeeJay but I'm not even sure what attachments I should be looking out for lmao!

Ah the great TMX v KA debate!  I always held off getting a KA wishing it could do more, never knowing that the TMX existed - and as soon as I did, I pounced!

Maybe when I have piles of spare cash lying around one day I will buy a KA just because they look good and are great for baking, however, I think if having to choose between the two, it's hard to go past the TMX.

Julie, your pasta looks absolutely beautiful - no wonder your mac cheese was out of this world!

Oh how wonderful Meagan, you will really enjoy it.  If you have trouble with the pasta, let me know and I will give you the recipe of what works for me.  It has to be a drier dough than normal or the shapes won't keep their shape - will flop, IYKWIM.  I went so beserk when I first got mine that I'm still using the pasta that I dried  :o.  It's lots of fun.  ;D

Cookie would love to see your liquorice ice cream recipe, sounds great.  :)

I love that store as well Meagan and Gretchen.When my DS was living in the US I always made a point of visiting their nearest store when staying with him.It's such a same they don't post overseas. :(

me too! One day......................................The TMX has spoiled me for other appliances LOL

I would love to see the liquioice icecream recipe - that is my absolute favourite flavour.

I also have one from a friend that I think is from a George Caloumbaris (sp??) book. All I have written down for that one is 1½ cups low fat milk, 170g liquorice, 2 egg yolks, 75g castor sugar, 120ml cream. The only instruction I wrote was melt liquorice in milk, whick egg yolks and sugar. This is probably the one I'll try first.

Did Thermomixer post a recipe for liquorice icecream a long time ago?

Oh, you soooo can!  I have the pasta maker/shaper  for the Kenwood, I think it also does biscuit shaping ....

I have to confess I found it pretty time consuming and the last time I used it I only had one child .... (yeah, I've got three now!)  Its something I'd love to get going again with it.  I also have the sausage maker attachment for my Kenwood.

I'm feeling like "Know it all Nik" tonight but the Kitchen Aid and the TMX aren't remotely comparable.  The KA is predominately a mixer, whereas the TMX mixes, grates, kneads, chops blah, blah, we know what it does.  Bless your friend but she's saving no money.

I've had a host of kitchen gadgets, many of them pretty expensive, and they ALL come with some writing in bold that says words to the effect of DO NOT USE THIS ATTACHMENT TO GRIND NUTMEG, and yet the TMX does it with ease - even DH was impressed, after his initial worry that I was going to break it.
