1 large egg
60g peanut butter
140g banana, cut into pieces
65ml skim milk
140g plain flour
1 tspn bi-carb soda
1 tspn baking powder
60g dry-roasted peanuts
Preheat oven to 180o C.
Spray a 20cm square baking pan and line it with baking paper.
Chop the peanuts 2 seconds/speed 5. Set aside.
Place the peanut butter, banana and egg into the TMX bowl.
Mix for 10 seconds/speed 7.
Add the milk, flour, bicarb & baking powder and mix 20 sec/speed 2.
Add the chopped nuts and mix through 10 sec/speed 2.
Spread the batter into the prepared pan. Bake 25 mins. Cool and cut into 20 - 25 squares.

As a non-diabetic I used honey cashews and peanuts instead of the dry-roasted peanuts.
Chopped up 45g choc chips 3 sec/speed 8 and melted for 2mins/50o speed 3. Drizzled this over the top once the slab was cool.
Had no fresh bananas so used frozen ones, blitzing them first before adding the other ingredients in the first step.
It was nice spread with butter too ;)

Thank JD- One of my friends has a diabetic son and as we see them often I'm always on the lookout for suitable things to make for him. Also, although not diabetic DS2 needs to watch his sugar intake so this will be good for him as well.
