Title: Gluten Free Bread Rolls

Hello! I'm brand new to the forum but thought I'd share this recipe. I recently moved house and all our belongings were in storage for three months between houses. I had my TM but had accidentally packed my GF cookbook (!!) so I looked up another GF bread recipe and this is based on that recipe.

GF Bread Rolls (It can also be made as a loaf but the mixture lends itself well for shaping or dropping into rolls)

200g Uncooked Whole Brown Rice
150g Uncooked Whole White Rice
50g Buckwheat
50g Dried Chickpeas
50g Un Hulled Millet
200g milk of choice, lukewarm
200g water, lukewarm
2 tsp agave nectar
1 tsp celtic sea salt (use salt you have already milled or ground for best results)
1 Tbsp dried yeast or 1 sachet
1 (fairly generous) Tbsp xanthan gum
40g Macadamia Nut oil
2 Eggs


Procedure:

1: Weigh rice, buckwheat, soy beans and millet into TM bowl. Mill in 3 portions for 30 sec - 1 min each, speed 10.

2: Add all other ingredients to bowl and mix for 3 min on the dough setting. (I usually do a quick whizz at about speed 5 or 6 to get it all combined first)

3: Drop or shape dough with dampened hands into bread rolls on a baking sheet lined with baking paper, and leave to rise in a warm place for 1/2 hour - longer if you think it needs it. Make sure to leave space in between them for rising!

4: Bake at 180C for about 30 minutes or until cooked. Be sure to check your fattest roll with a skewer to be sure it is cooked. The crust can sometimes appear deceptively dark before the inside is cooked properly.


This recipe has worked well for me most times - once I had a disaster with it but I couldn't figure out what I did differently! I'd be interested to hear how you go with them!
They are best fresh but keep well airtight in the fridge and then lightly toasted. I've never frozen them. They do tend to be a bit crumbly but I like them because they don't have that tough chewy texture that many store bought GF rolls have when toasted.

I find it's easiest to create a free account with either photobucket, picasa or some other web based photo album organiser. Once you upload your photos to the site from your camera, you can then click the (http://www.forumthermomix.com/Themes/bimby/images/bbc/img.gif) button and navigate to your album and the particular photo you would like to insert. Click it's link and it should come up in the box.

Hi there, I am very new to Thermomix, I have only had T-mo for 3 days, but I am in love!!   :) :)

I am just wondering if the macadamia oil in these could be substituted with coconut oil? Thanks in advance.

You could substitute any oil, I imagine. I'm going to try theses tomorrow. I have some friends who are on a GF diet and I want to impress them with the Thermomix😉
