I have now made this recipe twice - first time I popped the corn first then weighed out 100g and it made three trays with not quite enough syrup. Nevertheless it was a hit with my teenagers. Today I made it again and this time weighed the corn before popping and ended up with two trays and enough syrup to bind. The chocolate to pour over needs to be heated for more than the two minutes. It was ample to cover the two trays. The bars are quite edible without the chocolate.
You do need to be careful to remove any un-popped kernels as I didn't the first time I made it and my 5 yr old ended up with a crunch which put her off eating anymore of that batch.
Overall, a great recipe which will become a staple in our house for school snacks - great for nut-free schools. Makes enough to keep the dc happy for the week.javascript:void(0);

Has anyone tried playing with the sugar content in this one. It seems very high. Will it still bind with less sugar. I'm also assuming that the chocolate is just a topping and can be omitted. My DS9 isn't very fond of chocolate.

Sue, I have done the recipe as is, and although everyone loved it, I was a bit concerned with the sugar content. It has honey, maple syrup AND brown sugar!! OVERLOAD!!!
Next time I made it with 50g honey, 25g maple and 100g brown sugar. I didn't want to cut down first time too much. I also added 2-3 tablespoons sunflower seeds and 2tsp chia seeds. I didn't use the chocolate. I think I would next time cut down a bit more on the sugar as it was still sweet( cos of the maple)but the kids did look at me and say where's the chocolate!!!
Next time I'll drizzle choc on to let them have their choc fix!

My DD7 made this as per hools003 and we further reduced the sugar to 80grams. Worked fine in terms of holding the bar together and not too sweet. You get a real popcorn flavour. The orange zest was a little overpowering though for DD. She said next time she might try some lime zest. This will be a welcome addition to our lunchboxes and DH even gets to take some to work.

Thanks for that Sue. Good to hear that the bar holds together. I suppose it's the butter and honey that does that. I'm trying to find some more things that I'll be able to chuck in the kids lunchboxes when they FINALLY go back to school next month!

I thought the bar held together. It only holds together in the fridge. Once out of the fridge it crumbles. I'm not sure what its like when it has the full amount of syrup. I'll keep playing with as the kids like it. The kids still like the crumble though and took it as flavoured popcorn.

I made these today with hools' suggested quantities of less syrup, honey etc. i used 100g rapadura sugar. they held together well and aren't too sweet. i covered them with a little bit of white chocolate (not the 220 g suggested in the recipe - more like 150 g and 15g oil). very happy with the recipe - 4 yo DD loves them. I've eaten about 4... :o

I made this on the weekend with chopped apricots and they tasted great but have gone very soft after the second day and not nearly as nice, has anyone else had this problem? they were kept in the fridge until set then an airtight container in the cupboard.

I've just made these, with dried cherries as the fruit (well chopped).
I found that I couldn't even get half the popcorn into the bowl to begin with, and then the 'toffee' started to harden long before I could get all the popcorn incorporated in a mixing bowl. I think I ended up with 1/5th to 1/4 of the popcorn remaining.
Spreading it in the tin was hard, so sticky ... ended up oiling my hands and just manhandling it.
Smells delish. It's in the fridge right now to cool. Hopefully it won't go soft too quicky, but I think that for it to *not* go soft, the popcorn really needs to be completely covered in the toffee mix, which hasn't happened.
We'll see.

So many requests for this one so here it is.
Popcorn Brunch Bars
zest of 1 orange
150g dark brown sugar
100g honey
50g maple syrup
55g butter
pinch salt
1 tsp vanilla essence
50g rolled oats
50g organic shredded coconut
100g craisins or dried fruit of choice
100g air popped popcorn (with any remaining kernels removed)
220g chocolate bits
25g flavourless oil
Place zest into TM bowl and mill for 10 seconds/speed 9.
Add sugar, honey, maple syrup, butter and salt to bowl and cook for 7 mins/varoma temp/speed 4
Add oats, coconut, fruit and half the popcorn and blend for 10 sec/reverse/speed 3. Remove and place into large bowl.
Add remaining popcorn and mix by hand with the spatula.
Press firmly into lined 23cm square pan and place in fridge.
In a clean, dry bowl, melt chocolate with oil for 4 mins/37o/speed soft.
Spread onto top of bar and refrigerate until set. Cut into musesli style bars with chocolate on the bottom. Wrap individually in foil and keep in airtight container in the fridge for up to 1 week.

I made some popcorn tonight in the microwave as I am going to make this tomorrow. Saves using the frypan.
Put about 50g popcorn kernals in a brown paper bag*, fold over the top about 1.5cm and staple once to hold. Press all the air out of the bag and fold in half. Put in the microwave for about 1 min or until popping starts to slow down. (Don't overcook as you will burn the kernals inside the popped corn). I did 2 x batches and the staple does not cause sparks.
*Note: if you wanted to make popcorn for a snack you can put a bit of oil and some seasoning at this point

I made this today and reduced the honey, maple syrup, and brown sugar as suggested. Nearly didn't have enough to sufficiently coat all the popcorn mix, but that could have been me. I used cranberries and mama mia this is bellisimo! Can't write anymore cos I am too busy stuffing it in my mouth

These look great, I think my 5yo DS would love them. Do you think it would matter if the oats were left out for a gluten free version? Any suggestions for a substitute?

I believe you can get GF oats Stephanie or Quinoa flakes can be used as a substitute for rolled oats.

Sorry not a fan of this one far too much popcorn and I needed to mix in two large bowls. Also needed 2 dishes to put it in in the fridge. Left a sticky horrid,mess in the bowl. Didn't know wher to put the vanilla essence so I left it out
Don't know if I mucked it up -possibly my fault.
