hi all
i have a demo next weekend and have just rung to confirm details and make sure the host is getting her ice ready and she told me she is just going to buy a bag of ice . when i did my training we were told the sorbet doesnt work as well with bought ice. does anyone know if it really makes a difference or not?

They used bought ice at the cooking class I went too. I have only used home done ice myself...but only because I don't have the freezer space to keep the rest of the ice.

You will find sorbet made with the bought ice will be very "wet" & melt quite quickly. Suggest to the host that if she wants to buy ice that she does that in advance & gets it into her freezer in smaller quantities to enable it to harden up a bit before the demo. I find this is also the case with ice made by fridge/freezers that make their own ice.

Yes it will be a bit melty but just keep dropping it through the hole and watch the vortex, if it is fast moving just keep adding ice until it is moving slowly and is thickened :)

I always have a bag of ice in the freezer for sorbets etc. I also have used it plenty of times at demo - as the gals have said you may need to use a little extra but it is usually fine at the set ratios if the is really frozen. ;)

Interesting - wonder why? If you use boiled water to make ice cubes then I think they are harder ? Did I just make that up ???

I thought the boiled water made them freeze faster and in turn clearer ???

I thought the reason the bought ice wasn't as good was because it is hollow in the middle -therefore less ice. I use the ice from my fridge (makes it's own) & that is solid & very hard so works like ice cubes from a tray.

Em, I've used brought ice at a demo before and it was very wet & slushie. I was told it was something to do with the integrity of the ice ???
At times I've taken home made ice with me if not too far to travel using the thermoserer ;)

I had problems making things with ice to start with, because I have an ice making machine and the cubes are not as dense as ice made in a tray in the fridge. As Megan said, you just watch through the hole and add more until you get the right effect. The resulting sorbet doesn't hold its freeze for as long as that made with solid blocks.
