Lucky you Robyn - I'd juice and freeze some in ice-cube trays for when a recipe calls for lime juice. Did a bit of googling for you and came up with this one

There is a squash/cordial recipe in the UK cookbook that can be made with limes. Let me know if you would like me to PM you the recipe. :)

good excuse to have a few gin & tonics :-))

I recently tried one from the back of a Kerry Greenwood, Corinna Chapman adventure 'Forbidden Fruit'. Was excellent (both the cordial and the book)
8 lemons or equivalent in grapefruit, oranges etc: juice of all and grated rind of three (I used about 12 limes as they were mostly super sized and juicy)
1kg white sugar
8 cups boiling water
1tbsp tartaric acid
2 tbsp citric acid
Mix all ingredients together until sugar dissolves. Bottle and seal
Serve to taste (about 1 to 4)

I just remembered that one of our UK members posted the recipe on the forum. You can find it here:

I would imagine that you would need quite a few limes. Maybe 8-10??? :)
