Title: Green Goddess Salad Dressing

As scribbled down on a piece of paper by my friend Margie, then adapted a bit by me!
Don't omit the anchovies!!!
You will not taste their fishiness, but they add a deeper flavour to the mix.

1 spring onion
1/2 bunch parsley
1/2 bunch chives
1/2 bunch of basil (can use mint if you prefer)
1 clove garlic
2 anchovies
 Whizz on speed 7/30 seconds, scrape down if necessary.

1/2 avocado
1 cup mayo
1 tsp tarragon vinegar
juice of 1 lemon
Whizz on 7/20 seconds or until all blended.

Does it go best on a green salad, or a mixed salad?

I would use this on just about anything really!
It is great with seafood, would tart up a chicken salad well, or could be used as a dip with fresh veggies!

Amanda, thank you so much for this absolutely delicious dressing.  I could just eat it by the spoonful.  I had all the herbs in my garden and only had to buy some spring onions (mine aren't ready to pick yet).  Couldn't get tarragon vinegar at Foodland so used apple cider vinegar.  Will serve it in a jug for lunchtime guests to help themselves as one of them does not eat any dressings. Made a good quantity so took a small container over to neighbours to try out.  :-* :-*

It also makes a very tasty dip, served with a few carrot and celery sticks.

Me a consultant Thermomixer - never.  Where would I ever find the time  :-)) ???  It went down well today and yes, I agree it would be a great dip - nice texture, not too thick like some dips.  Or nice on a baked jacket potato too. Endless possibilities and very cost effective if you grow your own herbs.

Thanks for bumping this one Jabejak - it is delicious and so cheap to make if you have all the herbs growing.

Wanted to make a new salad dressing and remembered that I had this on "my to do list" since joining the forum.It's absolutely delicious and so full of flavour.Didn't have tarragon vinegar so used cider vinegar instead and threw in a little tarragon to get the taste. :)
