Title: Gluten Free Wraps
Post by: terstoo on February 22, 2010, 11:47:43 am

I found a great recipe for a gluten free wrap. I've adapted it to how I like it. The original recipe is at:www.glutenfree.wordpress.com (Kate has some other great recipes too!!!) I usually use Orgran's GFG Substitute, but in this batch I used Xanthan Gum as I couldn't get the gfg. The recipe calls for Xanthan gum, if you use the gfg the mixture is more like a cake mix batter than a dough. But still works and still tastes great!!

GLUTEN FREE WRAPS
1 cup Glutinous Rice Flour (120gr if using the scales on tmx)
1/2 cup Tapioca starch (60gr - tmx)
2 tablespoons sugar
2 teaspoons xanthan gum
1 tablespoon yeast
1/4 teaspoon salt
3/4 cup water (190gr - tmx)
1 teaspoon apple cider vinegar
2 tablespoons oil (I use Rice Bran oil, you can use Olive Oil)
2 Eggs

Preheat oven to 180c.
Put the dry ingredients in TMX and mix on speed 4 -5 for 5 seconds. Add the wet ingredients and mix on speed 5 - 6 for 10 seconds. Scrape sides of bowl and mix again for 5 seconds if needed. Line a pizza tray with baking paper and spoon or pour some mixture onto tray and spread thinly (to make it easier wet the back of the spoon with water, then spread). Bake for 13 - 15 minutes. When cooked, cool on wire rack. When cold, roll in baking paper, then store in ziplock bag in freezer. When you want to eat one just defrost, it will only take a few minutes. Can be eaten with salad ingredients or even spreads. Can even be toasted in a sandwich press!!!

I work at as a canteen manager in a high school. We have a boy who is ceoliac, and if he doesn't want to bring leftovers I have these in our freezer and he just comes and order a gluten free wrap, usually with chicken, tomato and feta cheese and then toast it in our sandwich press. (We toast all our sandwiches, etc in baking paper for 2 reasons, 1 - no cross contamination, and 2 - easier to clean!!!
I don't know how to add photos to here, but they are on my blog, so if you want to see what they look like just go to there. These wraps taste great while still warm spread with chocolate hazelnut spread!! YUM!!

If you have any questions please ask!!

That's OK terstoo.  ...and it was the idea with baking paper, not powder, that I thought was good.

They look great!  I made some once with a gf bread mix, done pretty much the same way, but yours look better - not as thick as mine were.  Good one!

Could you slice these then bake these till they were crisp so you could use them as crisps or crackers? Bit like what you can do with pita bread??

Sure can ILB. Cut the wrap or a tortilla into triangles, spray or brush with oil, sprinkle with seasoning and bake in a 180o C oven for about 8 minutes or until crisp.

Ok - fixed up the post so that you can see that I just posted the pics from terstoo's website.

I ONLY ever use bright RED nail polish.  Just can't abide purple, it doesn't go with my complexion  ;) ;) ;D

I have found a gluten free Oreo recipe that I want to try and convert for the TMX. When I do I will post it!!!

yum! DD is now suspected of being gluten I tolerant. Thankfully having the Tmx, the forum and all those amazing blogs to refer to I'm not feeling too over whelmed. The only problem is that the hard drive on my NEW pc has decided to no longer power up  >:( :'(

Just another dimension to your busy life ILB. I'm glad you aren't feeling too overwhelmed- and anyway - if anyone can cope I'm sure it's you. Just remember the old saying.
A woman is like a teabag. You never know how strong she is until she's in hot water.

I dont believe it! I was unplugging all the extra leads on the hard drive and thought I'd give it one more try - suddenly the light appeared and the hard drive booted up  :o :o :o :o I've pulled those plugs so many times already, changed power leads - EVERYTHING!  So I'm happy (and completely baffled!!) to announce that my PC is suddenly back in action again - HOORAY!!!  ;D

Well done - I had problems yesterday then realised that my iPod was attached and it just kept crashing - took the lead out and no worries  - temperamental !!!!

Ipods are a pain aren't they  :-))  Glad it was nothing serious.  :)

Apparently talking to the IT guy this morning the computers can get a "power jam" and it's a matter of unplugging, turning on, then plugging back in again or something like that. So now I've been told to go and buy a UPS  ??? (apparently it's a Uninterupted Power Supply - Gee wish I could get one of those for myself  ;) :D ).  The UPS is supposed to keep the power supply even so no surges or no brown/black outs will affect the PC. Had a bit of a chat with our friendly IT department at work, got a contact for work's computer bits and pieces so have today ordered a UPS & an external hard drive to back everything up on.

It's amazing what you learn in a crisis! Oh and if anyone now sees 1T or 2T on hard drive or computer things, it's a Terra-byte (I think  ??? it's 1000 GB!)  8)  :D :D

(NB: Lots of apparently's but really I have no idea  ??? ??? :-)) )
