Title: Herb Paste

This recipe is from the 28th. issue of' Dish' magazine. An excellent NZ publication. Probably my favorite mag. at the moment. I have adapted the recipe to be made in the TMX and with some small changes to accommodate what I had in the pantry.

1 cup each of flat leaf parsley and of basil,chopped. (I used pesto that I had in the freezer, without the cheese)
Zest and juice of 1 large lime
1 teasp. each, cumin, coriander and paprika
1 Tablesp. wholegrain mustard
2 cloves of garlic
1/4 cup of olive oil
Salt and pepper to taste


Drop garlic on to blades, speed 5.
Drop in parsley and basil
Add rest of ingred. and zap on speed 7 until a rough paste is formed.


I spread this over a chicken prior to roasting. Marinated in the fridge overnight.
The paste could be spread over vegetables, or mixed with butter or oil to make herb bread.

That would be great to have in the freezer.  Or little jars as presents.

Thanks Chookie, will put it on tonights chicken.

I don't think I have ever seen 'Dish' anywhere.  My favourite magazine ATM is the English BBC Good Food.

C ookie I also like the English BBC Good Food.   Try and get a copy of "Dish",  it really is a classy mag.

We loved the herb paste, thanks. I put it on some chicken I was cooking in the varoma.

Pays to do a bit of browsing sometimes, found this recipe Chookie and used it on our roast for tonight. Have frozen half of the mixture and will try it on chicken cooked in the varoma like Cookie did.  Lovely.

You guys say the nicest things  :-* :-* Today I didn't get around to having lunch so we had an early tea (5pm) and we don't normally snack during the day but I certainly wouldn't say I was slim Chookie.  I have a friend who eats 5 times a day - breakfast, morning tea (never exists in this house), lunch, afternoon tea (only if we have visitors), tea then supper  ??? ??? ??? I'd be the size of a house if I ate that many times every day. The only time I snack is if I have just baked something and of course then I have to try them - like yesterday, bad, bad girl ate 6 lamingtons  :-))

Thanks for this recipe Chookie.  Will be making this asap!!  I also love the Dish mag & English BBC Good Food.  I also receive the Aussie one but I'm just al bet över George & Gary at the moment - they have had too much exposure (give someone else a go) I think!!!

I agree Trudy. I always say this is the last time I'm buying this............until the next one comes out.

I really love the BBC version, it has so many lovely recipes in it and a great website.

This is delicious!!  I marinated chicken breasts in the paste (breasts sliced in half horiontally to make them thinner) and then steamed them in the varoma and served with salad.  Yummo - and very healthy!

This paste is a great way to use up any excess herbs!  Thanks for posting the recipe!

Bumping this recipe for those who havent seen it.  It is a great recipe for using up any excess herbs that you may have from the garden at the end of summer, or so that you dont waste herbs bought from the shop.  Fantastic to have in the freezer as a marinade for any kind of meat (especially great on steamed chicken), to add to soups or stews, to dollop on steamed vegetables ........ anything really!

Thanks for the bump Karen. I have made this and it is lovely. I must do some more before the basil gives up and the parsley runs to seed.
