Title: EDC p 115 Buttermilk bread
Post by: courton on February 14, 2010, 06:10:08 am
Since it is a miserable day here I decided to make the buttermilk bread from the EDC book and followed the recipe to the t.

It was very sticky and didn't come out of the bowl. Used oil on palm (as instructed) and tried to mould it but it was still too sticky. Finally gave up and used some bakers flour to get it going.

The bread is fine but very hard and crusty on top and soft inside.

Courton I would suggest you go straight to isi's bread recipes for a successful loaf or rolls.  Everyone loves them and even I am having success now whereas I was hopeless before dear isi came onto the forum.

Yes, you are absolutely right! Isi's portugese rolls are a hit in the family.

I just thought I might be adventurous and try the EDC one... will not do this again. Totally unimpressive.

I wish TMX would realise how much of a disservice they are doing by providing such a poor cookbook. Anyway, I know enough people complain about it so I will not go on about it.

The bread did not taste good once it cooled down. We had to toast it to make it more palatable!

I think TMX Australia should put Isi on the payroll and get some of her recipes in the EDC. Yummo!!!  :)

Isi for Prime minister !!!!   ;D ;D ;D

Poor courton - MANY years ago I attended a sourdough class where the temperature and humidity of the flour was measured and the amount of water calculated precisely based on the figures.

Once you have made a particular type of bread a few times you will get to the point where you say -Naaa , that needs some more flour/water etc.  If it looks VERY sticky when kneading then add some more flour.  If it is dry add some moisture.

It is a learning process that never ends

We have been making our own butter, so I have made the EDC buttermilk bread a couple of times.  Have attached a picture.  Am going to try some of the legendary Isi's bread recipes next  :).

Looks good & cuts well O4aTimtam.  Now onwards and upwards with some of isi's recipes.  I also like the olive oil rolls from the UK Thermomix site too for a change.

Love the poppy seeds Karen. My mob are fussy about seeds, so I put them in the bread.

Looks like this bread is better shaped into a 'rustic' style, rather than putting it in a tin.
I'm not going to try it yet, as I'm having issues with all my bread making at the moment. When I get that sorted, I'll give it a go. Thanks for the reviews!

Hi courton. Thermomixer is right. A lot of things affect breadmaking so it is best to go with the flow and go by the feel. I make the buttermilk bread a lot as I make butter al lot. (Wonder why I am growing). I find the EDC recipe needs a bit more flour in the mixture too.

I use recipes as a guide and tweak them myself as do many of us here. I know some need to have exact measurements but when you have a failure just go with your instincts. If it works it works if it doesn't then  doesn't matter  as someone will eat it as. There is always the dog or chooks to feed or breadcrumbs to make.  :-))

I made this tonight and it was very nice.  I am still very new to both the thermomix and bread making  so not sure if I did it right as the loaf had a soft crust and was pretty flat - but still lovely.

That sounded just like my first attempt at bread from the EDC Shazzy.  I then moved onto some of isi's recipes which is where I finally learnt how to make a loaf of bread or rolls (my favourite) and now I am confident to tackle any recipe.
This  (http://www.forumthermomix.com/index.php?topic=2665.0) is isi's Very Normal Bread thread.
Here (http://www.forumthermomix.com/index.php?topic=4253.0) is Chookies No Fuss recipe which is one of my favourites for rolls these days, or it can be made into a loaf.
I also like this  (http://www.forumthermomix.com/index.php?topic=2729.0) one for isi's Portuguese rolls.
You will find heaps of lovely recipes in the bread section, check out the photos.

Thanks Judy - I did try Isi's portugese rolls as my first bread attempt.  They were nice but think I still need more practice!  Will deffinately try the other ones though and give the portugese rolls another attempt.
