I added two soft bananas at the end and whizzed them through for extra goodness.  The one batch fed my two girls and I breakfast over two days.  Really nice and soft, not too sweet.

I'll have to convert my mum's pikelet recipe as that's what she always gets asked to make at communal suppers etc.

I too tried this when I first got my TMX and reverted to my good ol' trusty it's won at country shows!!  :-)) :D.
2 eggs
5 tbsp sugar
1 cup milk
2 cups flour
2 tbsp cream
vanilla

Great idea!  The batter goes a lot further with a couple of bananas in it, too.

I did the basic piklete recipe from EDC last weekend.
No leftovers here!! Even the 1yo. nigh on inhaled a few!!!!
Just told DH about the banana version.... guess I'll be making them on Saturday!!!

This morning I added two tablespoons homemade milo and a little extra milk so it didn't get thicker.  Changes the colour, but doesn't change the flavour much.  But adds lots of extra goodness with the nuts and seeds.

You could call them chocolate pancakes and serve with dessert with a little chocolate sauce.

Just made these for the first time. I used buttermilk and decreased the sugar to 30g. Also followed cathy79's tweak and added two bananas. Lucky I hid some for lunches as these disappeared very quickly.

Forgot to mention that I had to add more flour to the mix as it was very thin after I added the bananas.

I love the edc pikelets recipe! I whip it up EVERYDAY in my canteen and the kids and teachers love them!

Bumping this oldie. These are great. Made a batch in a hurry for lunch boxes this morning. There are none left as everyone grabbed extras as they left the house this morning. I do add less sugar, round half, give or take a bit  ;D
