Kulfi or Pistachio Ice Cream
Ingredients
• 80grams pistachios (shelled and unsalted)
• 300ml cream
• 1 can condensed milk 400g
• 1 teaspoon rosewater
• 1 small can evaporated milk (use 200g)
• ½ teaspoon cardamom powder
Method
Add pistachios to TM Bowl and pulse 2 to 3 times to roughly chop. Set aside
Add cream to TM Bowl, insert butterfly and whip until soft peaks form.
Add condensed milk, 1 teaspoon rosewater, evaporated milk and cardamom powder. Mix on speed 3 for 4 seconds.
Remove butterfly, add previously ground pistachios and incorporate, reverse, speed 3 for 3 seconds.
Pour into a tray or other moulds and freeze until firm.

Decorate with rose petals

courton - I made it yesterday and the review from daughter is it is absolutely yummy -very moorish!
Next time, I might just tweak it by adding saffron threads (authentic touch) and reduce the amount of evaporated milk. Overall, great recipe!

Would anyone be so kind as to indicate the approx. sizes of the cans of condensed and evaporated milk please. We can get them in various sizes over here. My OH loves kulfi and makes it but it takes a lot of time and effort to do it without the TMX.

Yes that was my problem too since I didn't know how many mls in each can. Ended up using 400 ml condensed milk and about 200 ml of evaporated milk. But would love to know if I was near the ballpark?!

In Australia condensed milk is in a 400g can and evaporated milk is 375g but there is one half that size available too. Unless it says so, you would use the 375g can.

Thanks Judy - I knew I'd be able to get the answer quickly.
So as this recipe says a small can of evaporated milk, I assume I should go for the half-size equivalent??
