Hi All
I have a customer who uses Thermomix for commercial use. She regularly makes custard in double quantities. She told me this works fine but she has then tried to make a second double quantity staright after the first and it does not thicken. She does not completely clean the bowl inbetween so I suggested to try that. I also thought it may be because the bowl is too hot and affects the thickening. I am no chef or custard expert though so hope some of you may have some suggestions.

Hmmm not sure, I've only ever made one batch at a time. Hopefully there's an answer. Has she tried sitting cold water in the bowl to get the temp down even for just couple minutes?

Strange one, I am no expert but with custard you bring the mix from cold to hot, so I think Lexi could be right , cool the bowl off.

I have tried, but for some reason my custard from the EDC does not have a very smooth consistency. There is a slight curdling, and I am at a loss to know why. Wish I could be of more help tho.

Firstly we need to know which recipe she is using - some have flour/cornflour, some have whole eggs, some have egg yolks, some are being cooked at 90 and some at 80.

She is using the recipe from the EDC but the first batch works so I am still thinking it is probably not cleaning the bowl completely or that the bowl is too hot. Any other thoughts welcome.

Sorry, keep forgetting to check - actually which version of the custard are we talking? Which Edition of the book ??

I have made a variety of custards at demo's where one person wants GF and another wants rice milk or one wants Orange /choc and another just wants lemon or vanilla. I make the custards one after the other and have never had a prob but I do clean and cool jug before starting again. Hope this helps. :)
