Hello :)

This bread is wonderful because it is soft and it can still be eat the following days without toast!
Great for the sandwiches.

Rustic Loaf with Yogurt

Ingredients
400 grams of flour 55
100 grams of Rye flour
40 grams of oat flakes
10 grams of vinegar ( I put Balsamic)
180 grams of Natural Yogurt
250 grams Water
20-25 grams of Fresh Baker's Yeast
2 teaspoons salt
1 Pinch of Sugar

Preparation
Put all the ingredients into the Thermomix - program  :: for 6 minutes!
Let the dough in the Thermomix and let stand for 30 minutes.
Heat the Oven to 250š
After this time place the dough in a  greased shape of Loaf 30cm .
Spray the dough on top with water and sprinkle with oat flakes!
When the temperature reaches 250 degrees - put the bread in the oven for 10 minutes - then drop the temperature to 200 š and bake for 30 minutes!
As always place a cup or some container with water inside the oven

I'm sure you'll love this one - and your staff kids and adults too!

Mmm, sounds excellent isi! Love the idea of yoghurt in bread. I will try this one tomorrow and report back!

Thanks Isi.  It's interesting that you put vinegar and yogurt into the loaf.  Can't wait to hear what others think.

Isi, what is flour 55 - is that a good quality bakers flour?

Yes it is wheat flour I usually use for all my bakerystuff
Here we have the  65 (more dense) and 55 (which I prefer)

Oh pooh! I just remembered I was going to make this today instead of my normal loaf. >:( I've got my normal loaf rising right now in the TMX, so maybe I'll make this one next! 8)

Well, I went to make this and found that my rye flour, which I've only had for a month was full of weevils. I bought it from Loose Produce and thought it would be fresh, but obviously not. Next time I'll put it in the freezer to kill all the eggs.

I remember Mum having to do this a well. Grocery shopping was a monthly thing so she had to use what she had.

Yep, I remember my Mum doing it too. But I just wasn't up to it, I was so cross that it should have happened in such a short time with 'fresh' produce. >:(

Hi, Isi!

I'm just enjoying the first slice of your rustic loaf for which I ground whole wheat and rye. I buy 5 kg bags of cereal grain and mill them in the TMX when necessary (never had any problems with weevils...). What attracted me to the recipe was the fact that it uses oat flakes which gives me an excuse to flake them myself with my funky cereal flaker.

Anyway, the bread tastes amazing and it has a good, moist texture. Next time I'll bake it in my silicon loaf pan because it was a bit of a bother getting the bread out of the tin (it's obviously not a good tin).

This is great, Isi. Please keep the recipes coming :)

I had planned to make this today as I'm hanging out to try it but went whopping with DD instead. It will have to wait until Monday as we have a car rally tomorrow and the Model A is going for the first time. Hope it doesn't boil as it is to be 410 here.

Oh, where is the embarrassing icon? I usually re read my posts and obviously didn't this one. Glad you enjoyed the laugh. Perhaps whopping is when we go shopping and stop at Dome (coffee shop) on the way home to have something naughty with coffee.  (cake wise, that is!)

Isi - Cookie typed "whopping" by mistake instead of "shopping".

"Whopping" is sometimes used to mean "very very big" or "huge" as in a "whopping salary increase" which means a very large pay rise - don't suppose many of us will be talking about that in this economic climate  ;) ;)

Please do ask about anything you don't understand on this Forum - we very much want you to be able to join in our fun

  Glad you are having fun isi but hope Katya's explanation allows you to understand why we all found it so funny.  I still crack up everytime I read it (which is often).  Reminds me of my dear mum whose hearing has never been the best.  At family gatherings when everyone was still sitting around the table, she would always get up and start the dishes and tell us to stay where we were (hard to do though).  We would laugh at something that was said and she would laugh as well so I presumed she could hear what was said.  I went over one time to start helping her and commented on whatever it was that had made us all laugh.  She told me she didn't know what we were laughing about but us laughing made her laugh.  Poor Mum, great in one-to-one conversations but gets lost in a crowd.

You poor thing Meagan,  I ahd never had them until last year when I purchased some besan flour from a local Indian shop.  To my horror when I went to use it there were cobwebs all inside the packet - yyou guessed it it went in the bin and now I can't bring myself to go back to that shop!!!!

I made this yesterday. I was quite pleased with it. It had a sort of sour dough taste, from the yoghurt and vinegar I guess. I let it rise in the tin for quite a while. I also didn't have a 30cm tin so I put it into 2 smaller ones.

The texture wasn't as bad as it looks with the hole in it. DH had just had a taste!!

thanks for the recipe -- i baked this tonight and made some changes -- added 1 Tbs oil and put dough in bowl (in hot water bath in sink) to rise for about an hour; then knocked it down and shaped into tin, and again in hot bath for about 35mins - should have left it a little longer i think --- result was a lovely loaf of bread -- it does have a sourdough-type flavour, which is great.  i wish it had have risen a little more, but i did only use standard white wheat flour -- i'll try again with bakers flour and spelt and see how i go.

I made this, but it was a failure... :(  Another bread that failed for me! It was way too moist and just didn't want to rise at all. Must be my yeast, I'll have to buy some more...or try making sourdough maybe.

You're probably right CP63, but I just can't stop trying! I have a loaf rising now, so we'll see how it goes. Not my yeast, but perhaps due to cold weather...

Love your recipes, Isi!  Using Greek yoghurt.  Taste nice, it's sort of short and not rise tall enough.  Maybe next time will try to let it rise in the loaf for awhile before go to the oven.
