Champagne Sorbet Recipe
140g Sugar
300g Frozen Champagne
6 Ice Cubes of Pink Grapefruit Juice
10 Ice Cubes
Zest & Juice of one lemon
Place sugar in TM bowl and mill for 10 seconds on speed 9
Add frozen champagne, grapefruit juice cubes and zest & juice of lemon. Slowly turn speed dial to 10. Add remaining Ice cubes after 20 seconds. Use spatula takes appox. 1 min.

Thanks APMSAM - I made a similar dish with some frozen and some liquid champagne.
Did it still have the tingling sensation with just frozen - need to try it. ???

Hi Thermomixer - I didn't have the tingling sensation with just frozen champagne but that sounds great, I'll have to try it with half / half next time. The more bubbles the better!

I can see everyone rushing for their bottle of champage to make this - if only to experience this 'tingling sensation' ;D ;D ;D

This reminds me of some champagne sorbet we had at a restaurant by the harbour in Barcelona. They poured "fresh" champagne over it at the beginning and then came and topped it up with more champagne when we were half-way through. We were sat outside on a glorious day and this was the icing on the cake, so to speak ;)

Dont know that i would waste champagne in a sorbet but definately would substitute with a sparkling wine.. Worth a try..

It's tricky to tell in Australia Frozzie as any 'champagne' that is made here has to be called sparking wine (or similar) as it can't be called Champagne.

Yes i know but you can still buy real champagne ?? Or do most just buy sparkling wine and call it champagne?? Champagne is made from three grape types.. Pinot noir, chardonnay and pinot meunier and obviously to be true to the name must come from the champagne province in France (north east).. There is another type of champagne called the blanc de blancs (white of whites) and is rarer as not every champagne house produces it and its only made from a base of chardonnay... This name is also given to some basic wines made with 100 percent white grapes. I love pink champagne !!

You can buy real champagne but the good stuff is expensive and I don't think I'd cook with it!

This recipe sounds great. Am going to freeze my pink champagne (pinot noir) tonight so can taste tomorrow night. Looking forward to it already. :)
