Recipe Name: Gingerbread Biscuits
Book Name: Festive Flavour
Review: My 4.5 DD was given gingerbread and christmas tree cutters on Boxing Day, so has been begging to cook. So this morning I made the mixture, popped it in the fridge, and surprised her with rolled out dough all ready to go. She was very excited.
The recipe was soooo easy, and quite easy to roll and work with after being in the fridge for about 45mins. I'm not big on ginger or spiced biscuits, and the mixture tasted a little strong for me, so I was a little nervous. But the end result was delicious - very nice. Could easily add more ginger or spice to taste.
Would recommend thicker biscuits if you like them a little soft in the middle. When they're nice and brown, they'll still be soft in the middle, but if thinner, they'll be totally crunchy.
Score: (out of 5*) 5

Thanks Cathy. Your DD would have loved that. We used to exchange the spices for cocoa when DD was tiny as she didn't like the taste of them.

Good work CB79 - great to see the budding Bimbette at work :-*

The only problem is that all her baking is not good for my waist. So far it's muffins and biscuits - far healthier than bought, but still supposed to be treats only.

Bugger :(

These biscuits roll and cut soooo well. They are being cooked and devoured regularly at the moment, so really need to experiment on reducing the sugar.
If the dough gets hard to work, just warm it up slightly. And if too soft, back in the fridge.
I've found that everybody who eats them loves them - mild enough for the kids, and the ginger lovers enjoy them too.

Gingerbread dough is so " child friendly".I use to make the Delia Smith recipe years ago when my children were small and we had a cooking session with it.Off to find that old recipe. This forum is great for reminding me of forgotten recipes. You never know I might need it one day IF I have grandchildren.

Whipped these up tonight and they are yummy and easy. Served them warm with honey cinnamon yoghurt. Big hit in our house and no need for icing.

Thankyou girls. I only have three JD and they came free with a baking set years ago. But they do the job well. The heart one is a bit bigger than the others and I find the cookies cook longer so I put these all on one tray and do the other shapes on a second tray. Not sure if yours are like that but it's something to keep in mind.
-
Mine has so many in the pack that I guess I can choose shapes around the same size Kimmy.
-
These look delicious.

These were great fun! DD 2 helped and enjoyed eating the pastry and making marks in the gingerbread people with her fingers :o
Easy & yummy, the dough was great to work with and the end result was not too hard and not too soft.(http://img.tapatalk.com/d/12/11/27/6apy4azu.jpg)

I love these biscuits. They are a true hit in our house. We didn't ice them and they are still yummy. I found It quite hard to roll the dough. Not too sure what I did wrong cause everybody else seems to find it easy. It just kept crumbling with me and the shapes broke quite easily. The kids loved helping out though. I'll definitely make these again.

These were great here to, I didn't have any problems with the dough after I gave it a good knead although mine weren't as dark as every ones

I like the happy faces on your gingerbread men. Sounds like it's a good recipe to try. :D
-
Love these biscuits! So easy and so yummy and not too gingery for the discerning palate! Best of all, one batch is enough to make enough cookies for my cookie Christmas tree!
-
Your tree is awesome tat. Sooo yummy well done.

Thanks Kimmy! I got one of those cookie cutter kits! Too easy and so much fun to decorate. Even made Royal Icing in the thermie! I can't wait to get started on my next one!
-
I must buy my DD one of those kits - the kids would love to make a Christmas tree.

Completely out of season, but last night I made some more of these. I had been inspired after DS4 had insisted on a gingerbread man from the vending machine when we were stuck in hospital. He ate only one hand and told me he was full which I thought was strange so I tasted it myself. Oh my goodness, it was quite literally cardboard. So we returned on the promise that mummy would make him proper ginger bread men that tasted yummy. I've made these before and on the second visit I remember now how my dough was very crumbly the first time so added a good dollop more syrup which makes them a bit easier to handle. I also reduced the amount of bicarbonate to just about a quarter of a tsp so they didn't rise too much. I rested the dough before rolling and cutting and when the shapes were cut actually put the whole tray in the freezer for an hour. I then baked for 11 mins at 200 degrees (again to try and keep their shape). I am so pleased with the result and will use the above method each time now.

Edit: forgot to add that eyes and buttons are mini M&M's and the mouth was shaped using a teaspoon.

It's good to know your DS knows a bad cookie from a good one Brumington and I'm sure he took more than one bite from these gorgeous little gingerbread men.
-
Wow! Brumington - they look delicious! Mini M&Ms - inspired! I must remember to come back and look at Christmas!
-
They look fantastic brumington.
