Title: English Muffins

350g wholemeal flour
140g bread flour
1.5 tsp dry yeast
2 tsp sugar
1/4 tsp bicarbonate of soda
1.25 cups of water (I did weigh this, but didn't write it down, sorry!) N.B. this is a regular cup, not TMX MC
25g milk powder
2 tsp salt
cornmeal/polenta for dusting with

Combine all ingredients and mix for 10 seconds on sp 4.
Knead  :: for 1:30min then turn off and leave to prove for one hour inside the TMX (with MC in).
Knead again :: for 2min then remove onto board dusted with cornmeal/polenta and roll into a log about 6cm in diameter. Slice into rounds about 2-3cm deep. Shape with your hand into a disc shape with quite flat sides. Place on baking tray (there isn't a great deal of spreading during baking) and leave for one hour.
Bake at 200 degrees for 15 mins, turning after 10 mins.

Thank you so much - this was on my project list to find a recipe and convert  :-* :-* - some extra sugar, mixed spice, cinnamon and sultantas would make a yummy fruit version!  ;) ;D

Brilliant - I think somebody did have a recipe - but can't find it.  I know I had intended to try - but now we have a great recipe - THANKS  :-* :-* :-* :-*

These look lovely and the method is certainly easier than my version (non-TMX)  that involves a griddle that has to be just the perfect temperature  and  numerous muffin rings  that are tricky to handle when hot - without deforming the muffin batter within.

Thanks for posting it.  I'm going to try it New Year morning.

I made these today and was thrilled with the result.  I haven't toasted one yet but have cut them all in half and frozen all but 2 of them (breakfast tomorrow).  Perfect muffins, thanks Depome - so easy to make too.

Thanks for bumping this recipe.  Certainly easier than mine.  Only concern is that they don't seem to have that lovely rough surface that soaks up the butter.   Will give them a try.

You are right Chookie, no rough surface but the butter did soak in easily.  I am not a fan of wholemeal products but I thought I'd follow the recipe to a T (and use up the last of some wholemeal flour I did have in the pantry for some reason) so next time I'll use all white flour.

I had one toasted this morning for breakfast, and JD it did have a few holes in it. :D :D :D :D, it was a bit heavy maybe that is the sour dough starter that I used but the flavour was great.

I have made these for the past couple of weeks every Sunday. They are great and we love them much better than supermarket and waaaayyyy healthier. I roll them in polenta. Thanks for a great recipe 5/5 from us.  :)

Yours didn't get too brown like mine Mrs KK, do you cook them on a low heat or line the pan with something?

Hi Judy - I just cook them in the oven for 15 mins. Generally I use scanpan roasting pan lined with bake sheet. My oven is not very reliable and is slow.

I think Thermomixer had a recipe for crumpets Kim, I don't recall a muffin one from him.  Chookie has sour dough muffins on the forum though and that's where I got confused with this recipe when I asked Mrs KK the previous question.  Chookies are cooked on the stove top, these are cooked in the oven.

Yum, these look and sound good, I buy English muffins  :o - had not even thought I would be able to make them! Will definately be trying this soon!  :)
We have them with bacon, egg and cheese in them (like a Maccas one) and we all love them. Will be so happy if I can make the muffins too.  :D :D :D

Made these again for eggs benedict this morning for breakfast. Great recipe. I could put the dough in the fridge overnight and just let it come to room temp and roll and final rise in the morning. Saved a little bit of time and the Thermomix didn't wake everyone. We had visitors and everyone loved them. Will definately try a fruit version another morning.
