Hi there,

Does anyone have a recipe for licorice icecream? Not the one with the big chunks, the swirl like one thats nice and creamy?  And oh so bad for you.

I glanced in a book at a friends place and it had liquorice icecream in. I think it was a George Calambouris (?) book. He just melted the liquorice in the milk before making the icecream. I've been meaning to try it.

I have made licorice icecream with licorice powder - but think you might be after the one with pieces of licorice chopped up and dissolved?

Let us know if any are suitable and we can help convert if need be.  Bascially chop the licorice and add milk and heat then put aside and then whip cream and put aside and then beat egg yolks and sugar and mix in the milk/licorice mix and when cool fold into the cream? The  freeze and when partly frozen, back into the TMX and blitz and back into the freezer.

I have a delish one on my website...enter licorice into search or use drop down menu under recipes to find ice cream and go from there.

Hi Tenina
It's raining and I can't go get cream for your licorice Ice Dream.  Can I use ricotta?

I just had a look at Tenina's recipe. I'm not sure if it would be anywhere near as smooth with ricotta, and would the ricotta whip up?
Hopefully someone else will give an opinion.
On the other hand you could always try it. It would be a different texture and taste but quite possibly still very nice.

Well, I am pleased to report it is a success!  In the end I didn't have quite enough ricotta, so used 2/3 ricotta an 1/3 yoghurt.  I also added 1T of sambucca. 
It was rich, creamy and delicious.

That's really good.  It would probably be healthier too I still haven't made it, I know I will eat lots of it. Perhaps I'll try the ricotta way too. Thanks, you have created a different recipe to try.
