Anyone made marshmallow in the TMX? Recipe says 1 cup of sugar, 1 cup of water, gelatin/water mixture - stir to dissolve & bring to the boil. Reduce heat, simmer 7 mins. Cool slightly, beat with electric beaters until fluffy. It is the last step which has me wondering if speed 4 with the butterfly in would be fast enough to turn it into marshmallow. Have made it in my sunbeam mixmaster and from memory it took quite a lot of beating to get to that stage. The rest of the slice could be done in the TMX so maybe I'll just have to do the final step in a non-TMX way.

Oh - this is one thing I couldn't wait to make in TMX but have forgot all about it - think I'll try this today. Thanks for the reminder and I definitely will be trying all steps in TMX - all stickiness contained to the one pot. :)

JD - I haven't made it - but think that I would try just half the amount of water and sugar so that it is better able to fluff up?
Tenina has done them for the Thermomix blog http://thermorecipes.blogspot.com/2009/04/hoppy-easter.html (http://thermorecipes.blogspot.com/2009/04/hoppy-easter.html), so it should work

Made 3 batches - all had the white foam on top and a thin brown gel underneath - that means I didn't whip it long enough??? ??? Tossed it in toasted coconut - kids won't tell the difference - in fact they think I am so clever and especially made it that way :-)) but it is annoying when something doesn't work out. :-\

Nay nay - it sounds like there may have been some gelatine settle out. You may have needed to whip it a bit more.
Did they firm up as they should? Maybe if you soak the gelatine first, before adding to the TM bowl? Other more experienced members thoughts?

Before I got my TM I made some wagon wheel biscuits with marshmallow as the filling. Supposed to mix with electric mixer for between 3-4 mins until thick, but in reality it took 8-10 mins, so maybe yours did need more mixing. :)

Oh JO please don't post pictures like that up please I am trying to lose a bit of the girth before Chrissy :D They make me think about going into the kitchen to knock up something sweet :-))

OMG JO how fab do they look :o :o :o now I really hope (not for my sake at all) that everyone has success with the marshmallow so I can try some. Did you use a plain biscuit recipe JO?

Faffa, here is the recipe if you'd like to convert please do. ;D
WAGON WHEELS
60g butter
100g (1/2 cup) firmly packed brown sugar
1 egg
1 tsp vanilla essence
225g (1 1/2 cups) plain flour, sifted
110g (1/2 cup) caster sugar
1/2 cup water
3/4 tblsp gelatine powder
1 tsp vanilla essence
2 tblsp raspberry jam
150g dark chocolate, chopped and melted
For the biscuits
Preheat oven 160c fan forced.
Place butter and brown sugar in a large (I used small) bowl and beat with an electric beater until smooth. Add the egg and vanilla and mix well. Fold in the sifted flour. Place mixture onto a lightly floured surface and roll out to a 5mm thickness. Cut out 16 circles with a 6cm round biscuit cutter and place on a lightly greased oven tray. Bake for 10-12 minutes or until golden brown. Cool on trays.
For the marshmallows
Combine the caster sugar and water in a small saucepan , then sprinkle gelatine powder into the mix. Stir over low heat until sugar and gelatine dissolve. Bring to the boil, stirring and simmer for 4-5 minutes. Remove from heat and cool. When almost cold, pour mixture into a bowl, add vanilla and beat with an electric mixer for 3-4 minutes (took really about 8-10 minutes), until mixture is very thick.
To assemble
Spoon marshmallow mixture into a piping bag fitted with a 1cm plain tube and pipe marshmallow around the edge of half the biscuits. Spoon a little jam into the center of the marshmallow and top with the remaining biscuits, pressing gently. Rest biscuits in the fridge for about 15 minutes until marshmallow is firm then place on a cake rack and spread over melted chocolate.

Hmm I am sure there are better recipes for my waistline that I should convert but might give this a bash. I have decided that the HOURS I am going to be spending in layby lines one day next week I am going to use the time to try and convert some recipes on paper - will see how it goes :o :o

Thermomixer, I hate it when something you remember fondly shrinks so much over the years. Wagon wheels don't even seem to taste the same. (I had to try one to see!)

It's a common theme - reducing the size of the pack and keeping the price the same... >:(
I happend to pick up the latest Donna Hay mag today and guess what's in there - Marshmallows! She uses corn syrup and talks about it needing to be heated to 120C (VAROMA!!). Thought I might give that a crack too... along with everything else on the list.
