Title: Easy Mango icecream

Mango season in FNQ, and this icecream is so easy with the thermomix.

Flesh from 2 mangoes
I lime, juiced
1/2 cup castor sugar
30ml mango liqueur or white rum
300ml cream

Blend mango, lime juice, sugar and rim on 7-8 until smooth.  Add butterfly, then cream, and whip for 30 seconds on 4.  Freeze in the usual way. 

As this is not a custard icecream, it's best eaten on the day that it is made.  This is a good basic recipe for any quick fruit icecream, bananas are good too.

Mangoes are still expensive here, but for that icecream I can afford two.

Thanks Paul - I can just taste it now.  Maybe some coconut cream too.  bananas certainly would be good.

Just like to add it, it does keep. I was rearranging some freezer space and found the leftovers. before discarding I had to have a bite and it was great. It ended up as lunch.  ;D
 I am processing my Mango crop which means peeling, cutting and freezing. I am freezing some small parcels just for this recipe so will be able to have all year. Going to see if using frozen fruit and cream makes icecream like the sorbet.

frozen fruit and frozen milk will make a soft serve ice cream using the sorbet method  ;) ;) This is particularly yummy if you freeze some coconut milk as well and replace about 1/3 of the milk ice with the coconut ice. Then when it is made, add some passionfruit and mix on reverse to have a twist through the ice cream - very tropical  ;) ;)

You probably already do it ozzy-dj, but if you freeze on trays and then into bags when frozen it is easier to break up the pieces when needing to use them.  But, yes, you probably know that  :-)) :-)) :-))

Yep, I did it. froze a box of long life cream and my mangos. Then just did a sorbet method with a bit of maple syrup, frozen mango and frozen cream. Just what I was after. Might try the coconut cream option. That sounds good.

My reason for this option is I like to be able to make something at the last minute when friends drop by. The original version makes that impossible but as I always have a freezer full of various bits like mangos and cream it is very impressive.
