Red and Green Christmas Shortbread
Thermomix Festive Season 2008
Tweaking
I had to knead the dough for a little more than the 40 seconds stated and after I had rolled it into a log shape I refridgerated it for a while before I sliced it.
I didn't put the white chocolate on it as they looked lovely.
I found these to be very tasty and just right with the red and green colouring.

Recipe Name: Red and Green Christmas Shortbread

Book Name:Festive Cookbook (in both the 2008 and 2009 editions)

Tweaking details:
This is a family favourite and don't last long!

First tweak is to steam the pistachios for about 5 minutes to soften them, making them easier to cut.

Then the main tweak I do, is after rolling the dough into logs in baking paper, refridgerate them for a few hours or overnight. This will make the dough nice and firm for slicing. Otherwise it will fall apart making it very difficult to form nice biscuits.  I also use a serated knife to slice them, which makes slicing through the nuts easier as well.

White chocolate is a MUST with these. Even better is that white chocolate infused with Vanilla (it's an organic brand in the supermarket) If I'm feeling too lazy to dip them in white chocolate, then I add those little white chocolate drops to the dough mix instead. But if you have the time, dipping them is the way to go.

Thanks. The Avatar is from November at the Jazz Festival. Thankfully it's small and you can't see the icecream all over DD's face that she had just thoroughly enjoyed!

Should have just taken the accolades for the bickies and gone with it. 

The jazz festival is certainly a big event in Wang.  Worth advertising the fact that you support them.

Oh I do take full credit for those bickies Thermomixer - I made every single one of them! Both for the Wangaratta demo and the Corowa one.

Maybe next year I'll post something re the Jazz Festival. Brown Brothers have recently been awarded with appreciation as they are the only sponsors that have sponsored the Jazz Festival evey year since it first began.  It is a massive weekend for Wangaratta. Accommadation is booked 12 months out and they actually billet people out to stay with local families.  8)

That's fine ILB. It's simply another way of bumping it up. At least we all love them. DH has taken a batch to car club this morning. Apparently the guys there always ask him what he's brought for morning tea from 'that machine'. He's also taken some of Karen's Mums fruit cake.

LOL - there's no front lawn but a huge back yard you're welcome to pitch a tent in.  Hopefully by the time the next one rolls around I'll be in a bigger place with a spare room  8)

I made these today and OH yum.  Very very nice and so easy.  I did however do one batch plus a half - way too much for TMX to cope with, not a good idea!

I think theese will last for about 2 weeks or so without chocolate in an airtight container. With chocolate it will need to be kept in the fridge (for about a week or a little longer.).

Beautiful shortbread.  Loved the red from craisins and green from pistachios.  I didn't dip in the white chocolate, which meant the biccies were made with no worries at all.  5/5

That's kind of you to say, KimmyH.  I've just been chomping on shortbread.  I only ate the uneven ones last night but couldn't resist getting into the saved ones today.  Oh dear!  Christmas has come early.  :)

I wish I'd read the original review before I started because my log was very large and my dough very soft. The biscuits are a bit outsize, but they still taste yummy. I guess they'll taste even yummier when they're dipped in white chocolate! I loved the ones at the Festive Flavour Cooking Class...

Made these to put out for Santa on Christmas Eve and they were a hit!  Took the rest to the family Christmas lunch where they were served with coffee & tea after Christmas lunch.  I even had one person tell me I should make them to sell at markets so I was pretty chuffed with that.  

The only thing I found was that I ran a bit short of white chocolate to dip them in...I'd consider using 200g next time instead of the 150g.

Otheriwse, a really nice recipe, highly recommended!

thought I would add my comment from the other Christmas Shortbread thread here as well :) I'm not sure if we are able to combine the two threads so thought I would just put the information on both threads  :D

I find it easier and more uniform to roll the dough out on my bread mat and cut the cookies out with the MC    Steaming the pistachios first (think it is in one of the reviews that JD linked to) still makes it easier to cut them out with the MC as well.

Thanks for the tip.

I already refrigerated the dough for a few hours before attempting to cut it but it was still pretty difficult, especially when the knife hit a piece of pistachio, so I had some pieces thicker than others.

I've already been asked to make another batch so will try rolling it out and see how I go.
