Name of Recipe: Zucchini Brownies

Number of People: makes 24 2"x3" brownies

These little beauties have almost ½ a kilo of zucchini hidden in them.  Serve them completely cooled and your kids will never know they are eating veggies!!!

Ingredients:
1 egg
170g plain yogurt
110g olive oil
1 teaspoon vanilla
470g zucchini, roughly chopped
210g plain or wholemeal plain flour
30g baking cocoa
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup date sugar (or raw sugar)
80g rapadura (or another half cup of raw sugar)
100g chocolate chips
1/2 cup chopped walnuts, optional

Preparation:

1.  Preheat oven to 180 degrees and grease a 9”x13” pan.
2.  Add egg, yogurt, oil and vanilla to TMX bowl and whisk on speed 4 for 20 seconds. Don’t worry if it seizes up.  Set aside.
3.  Add zucchini to unwashed TMX bowl and grate for 10 seconds on speed 4 (scraping down the sides of the bowl after 5 seconds).
4.  Add flour, cocoa, baking soda, salt, rapadura, and date/raw sugar into TMX bowl. Mix until blended – 20 seconds, reverse, speed 3.
5.  Add liquid mixture back into bowl & stir for 10 seconds, reverse, speed 3.
6.  Spread evenly into pan and sprinkle with choc chips (and nuts if desired).
7.  Bake for 40-50 minutes (note: these brownies are very moist even when fully cooked).

Tips/Hints:
Wait until the brownies are completely cool before eating.

cathy79 -  I blitzed the zucchini a little more than in the recipe as I wanted to make sure it was as smooth as possible.  Didn't have the chocolate chips, so didn't bother with that step.  Also didn't have the baking soda (can't remember what that's supposed to do).  Easy Peasy! I cooked for 35 minutes and allowed to cool. On slicing it was beautifully moist and quite moussy.  Both girls gobbled them up.
Had a little too much mixture for the slice tin so put in 2 little ramekins and cooked.  Delicious little puddings, even while warm.

Snoozi - I really blitzed the zucchini but I didn't have any cocoa so used carob.. I am not a big fan of the carob taste (although I did use it in the last batch of chocolate nut spread and thought it was nice).  I don't like it in this but the kids are wolfing..

sabimby - baked it in a square tin, around 9 inches. I cooked it on 180oC for the 40 mins but it looked very wobbly so cooked it for another 10 or so mins, knife came out wet, cooked another 15 mins and still wet. The outside didn't burn though. Just wondering if the recipe needs to be edited to say that it should be moist and remove the part saying the skewer should come out clean??? Here I was thinking I'd cooked a dud (but a yummy dud!) however it sounds like others have had the same thing happen.

cathy79 - I cook mine until they "look" cooked on top, and spring back to touch. These freeze and defrost really well.  Don't forget they have yoghurt in them so do need to be kept in the fridge.

zeraa - Awesome. A bit to strong for the kids because I used dutch cocoa and dark choc. I used dates for half the sugar (the rest brown sugar as I had no rapadura) and they were good - I did them dry -Ii think they would have blended in better if I had soaked them in hot water foist as I usually do. I did a Spelt/rye/millet/buckwheat grain mix for the flour and did half beetroot and half zuchini. Very very yum. Beautiful brownie consistency and not too sweet.

ladybird - thanks so much for these, just made today and they are absolutely delish - DD (nearly 3) loved them and kept wanting more. they are healthy enough (with wholemeal flour) that I wouldn't actually mind, except that then she would think its ok to have limitless brownies!! I might cut down the choc chips next time to increase the healthy ratio..I did throw in a handful of fresh blueberries too and they were yummy.

em -  wow they are so moist and yummy, the kids love these and haven't a clue whats really in them ..haha thanks for the great recipe.

thermie crew - I loved the brownie recipe and couldn't taste the zucchinis at all but my children didn't like them - a big surprise!I think they were put off by the really moist texture. They'll eat zucchini slice though so can't complain!

Denzelmum - Made this last night without choc chip and walnut. Took some to work and got thumbs up from every one!  Very moist. Thanks, Chelsea.

Coops - BIG success and can't stop grinning each time my fussy kids go back for more, and more, and more, lol. If only they knew!!!

Thanks for trying them and giving a review Cathy.  Mine had little specks of green throughout, so blitzing for longer is a good idea (for concealment purposes  ;D).  I'm glad they were still yummy without the choc chips - I might try leaving them out next time too.  :)

I made these again a few days ago.  I blended my zuchini, instead of grating it, so it is complete mush and completely undetectable.  Delicious.  Sometimes the girls have this for breakfast as a treat.  A bit of chocolate like nutella on toast, lots of vegies, and some yoghurt.

Chelsea, can you find some more deceptive delights for us?

haha DD1 just asked me for some more "chocolate and cream please mummy!!!" (she caught me while I was making it and started freaking out about the yoghurt liquid mix saying it was "yucky" so I told her it was cream lmao!)  I'm such a naughty mummy!

Will try again with either carob or real chocolate lol

Glad the kids like it, I do too.  Mine's never burned, so not sure what happened there.  And certainly never had lumps so that must be the carob.  The middle is a bit wettish, but I think that's the way its supposed to be.  It's definitely cooked.  When I slice it, the middle spreads a tiny bit.  Delicious!

I think it's because I kept skewering it and having it come up wet but I'd say you're right in that it's supposed to be a bit wet in the middle lol  I will remember that for next time!

Thanks for the reviews guys.  I guess the thickness of the end result would vary as to the size of the tin used.  If you are using a smaller tin then the brownie would be thicker, but may need to cook for longer.  I've only cooked these once (when I converted the recipe from the website), but am happy to remove the skewer part and add the moist bit in.  :)

Chelsea, these continue to be a family favourite.  I think I've cooked 3-4 batches now.  I've got some in the freezer, so when I get them out I'll try and report back whether they defrost well.

I cook mine until they "look" cooked on top, and spring back to touch.

No, just an ordinary chest freezer that is always chockers.  I would LOOOVE and upright drawer freezer so I can sort things out better.  But don't like spending my hard earned money.

Hehehe we had a 3 drawer freezer and swapped it for a chest freezer as the drawer ones aren't big enough for some items that need to be flat and then they take up most of the drawer space.

I had these with carob first and then with cocoa and liked carob version better surprisingly as I don't like carob lol

Tonight I made Wholemeal Blender Batter Zucchini Brownies.

Start with whole grain and yoghurt.  Blend 1 minute speed 9, scrape down, blend another minute speed 9.  Set aside in a warm place for 12-24 hours to soak.

Place back in bowl, add oil and egg, blend speed 9 30 seconds.  Add zuchini, blend speed 9 about 1 minute.  It should create a real vortex, and blend very smooth.  Add remaining ingredients and proceed as usual.

Result is very, very smooth and extra healthy by being wholegrain and soaked.  I guess it would work for any whole grain - I used wheat.  Delicious!

No, it was very thick, but didn't need any extra yoghurt.  I had the same doubt, but was amazed that in adding the zucchinis, the moisture from them created the "vortex" that is required.

Apart from the soaking time, this method seemed quicker as you don't have to get things in and out of the bowl.

The middle of the brownies is really smooth and moussy.  The girls and I love them, but DH is still requesting "normal" brownies.

Zebraa, I'll be very keen to hear how your substitution goes.  Love reducing the sugar in anything that the girls like and they looooove this one.

do you use stevia at all? I get it very cheap from the markets so we use that a lot in baking - eg instead of using a cup of sugar I will use 1/4 c and 1/4 tsp stevia. It increases the natural sweetness so often I won't use sugar at all but dates and bananas and stevia - in things like muffins etc.

My boys aren't keen on this anymore  :-)) so I haven't made it in a while, but I think stevia should be fine.  I personally don't use stevia much as it is quite refined.  I add a pinch to my baking every now and then when I want a little more sweetness than rapadura provides.  :)

No haven't used stevia at all - just rapadura in everything, and go for low sugar recipes as much as possible.  For DD, the main thing is low unrefined sugar, and to eat it with some good fat to help slow down the sugar effect as much as possible.  Need to avoid the sugar highs.

How is stevia refined? The stuff I get is just dried leaves - I get it from the growers. I did have a plant myself until the little one pulled it out. Ratbag. I have saved the seeds so in spring I might grow it again.

Where do you get rapadura? What exactly is it? My bulk food place doesn't have it :(

Sorry Zebra I assumed that you were using the powdered stevia.  Rapadura is evaporated cane juice and you can get it from some health food stores, co-op's and through online distributors like biodistributors.  It is a great replacement for sugar in recipes and has a sweet wholesome taste.  :)

thanks for reminder re fridge storage, I wouldn't have thought of that and great that they freeze, though our freezer space (top of fridge) is tiny :(

I'm still waiting for my rapadura order so next time will use this and will try the soaking, i am about to start introducing that more in my cooking..

I have never tried to ice these before, but there is no reason why you couldn't try.  I read on another thread that you were considering these or the torta caprese as a birthday cake.  This is a great everyday recipe, but if you are after something special the torta caprese is really lovely.  Just my two bobs worth though. ;D ;D

The torta caprese is the best cake I've ever eaten so it hands down gets my vote too.

we are off eggs and wheat - just wondering what the best substitutes for this would be? i have buckwheat, millet, rice flour etc

and for the egg - i do have egg replacer but would prefer something more real if possible

I think you can use linseeds (soaked with water to make a gel) to replace eggs.  I have never done it myself but have read about it. Can you use spelt flour instead of wheat or are you off gluten?  I think most gluten free cooks use a combination of gluten free flours to replace wheat etc.
