The whole fam loved this one!
Lots of ingredients but very easy to make. I didnt have any lemon grass or chilli so left these out.
It is a very runny curry but is great with rice.
Could easily be bulked up by adding a carrot and small potato when chopping the capsicum and onion.
Will be making this one again.

I tried this last night with the chilli & the lemon grass. I was hooked from the moment I chopped the ginger & lemongrass - sensational aroma. It's a mild & creamy curry. I put in a whole 260ml can of coconut cream rather than what was recommended & I would put in more meat next time. The peas I put in were frozen so they needed a bit longer to be heated through rather than the minute suggested. I left it all in a Thermoserver for about 20 minutes & the peas reduced the heat of the whole dish a bit too much (temperature not spice!). Going to throw in some chicken breast with the balance of the sauce for dinner tonight as DH didn't have it last night & I'm happy to have it again. I would probably add a bit more chilli next time I do it from scratch too.
A definite to make again & SOOOOOOOO quick!

Good to hear. I know what you mean about the lemongrass & ginger. I used to grow lemongrass and lately have neglected buying it.

This was nice. I used carrots and extra chicken. I replaced the lemongrass with lemongrass paste. I felt it needed maybe a little more heat :-\ but family did enjoy it.

In the supermarket, fridge section near the Asian vegetables usually.
They don't always have fresh lemon grass when I need it, and when they do it's expensive :-))

Oh yes, know exactly where they are. Handy thing to have on hand and you can freeze them too can't you (like our VSG, they don't go hard).

Budget Busters book is one of the few TMX books that I think is worth buying. It is cheap , pithy and good.

Agreed Chookie. I like the Budget Busters booklet. I am making the apple pie from it for pudding tonight (halving the spices).

I love the date and lime cake from the budget busters. It has a really different flavor and is moist and of course so quick to make.

My husband loved this & it was really quick & cheap. A definite keeper. There was lots of sauce, so next time I think I'd add either extra chicken & put a meal in the freezer or some diced potato or pumpkin.

Just wanted to add my two cents worth and say that we loved this dish served with basmati rice.
It's not often I can find something that the whole family (including kids) loved but this was a winner. I was worried it was going to be too spicy but it just had enough kick to keep me happy without upsetting those that don't like much spice...even my four year old happily ate it.
I'll definitely make this a regular in our house!
