Name of Recipe: Steamed Dumplings
Number of People: 20 pieces
Ingredients:
740 g water
10 g. dry yeast
10 g. oil
50 g. sugar
500 g. flour 1 pinch of salt
Preparation:
1. Line Varoma container and tray with damp cloths and set aside. Place 240 g. water, yeast, oil and sugar in TM bowl, mix for 30 seconds at 37°C on speed 3.
2. Add the flour and salt and knead for 3 minutes on Knead (ear of wheat).
Divide the dough into 20 equal parts and form into balls and place on the cloths in container and tray of the Varoma, let rise for 40 minutes.
3. Place remaining 500g water into TM bowl, position the Varoma and cook for 15 minutes at Varoma temperature on speed 1. Open the Varoma and serve dumplings hot as a side dish.

Hi, thanks for posting this, how much flour dio we use and is plain or SR best?

I'm afraid I can't help you Alycia. For my dumplings I usually use SR but these have yeast in and are left to rise which I would think means plain.
Hoopefully someone else will be more helpful.

I too would think plain flour with the yeast.
Reading the recipe I wonder if baking paper scrunched up, wet and then wrung out so it is only damp would work in place of the damp cloths? Much easier to clean up :-)) :-))

It was translated (mainly using Google) from Italian - hence the funny line about wet clothes ;D ;D ;D :-)) )
It is 500g of plain flour.
The idea of wet baking paper is sound - I have used that for steamed dumplings.
