Title: Left over vegetarian chilli?
Post by: Sim on September 23, 2009, 01:26:40 pm
I made some kidney bean chilli in the slow cooker the other night and it was nice on the night, but overall it was a little dry and I don't feel like heating it up and eating the same old way again...

Does anyone have any ideas on how to use this up? There its lots of it! I would like to add more moisture to it.
I was thinking burritos? Maybe with home-made wraps?  Maybe some sort of pie? I don't really want to make lasagna with it because I just made a large batch of that.

There is so much of it, and I don't like wasting food....

On jacket spuds with a good dollop of natural yoghurt?

Otherwise I tend to use flat breads/tortillas and wrap it up in them with some shredded lettuce and perhaps some sliced tomato.

 :)

I haven't had baked potatoes in ages! Yum!

I had another idea after I posted... I could blend it up and make a pate/dip..?

If it's a little dry, could you perhaps add a can of crushed tomatoes or some tomato puree to it and top it with mashed potato or serve it over pasta.

Could you use some of it to make a soup by adding some stock and/or tomatoes?
